Grandma Johnson's Scones

Reviewed: May 9, 2012
Best Scone recipe ever! I make these all the time. Great with Mini chocolate chips! Great with Craisins! I sprinkle with Sparkling Sugar for a fancy look. I cut up the cold butter into little cubes before I cut it into the flour. These are super easy with an excellent result.

Chocolate Cookie Cheesecake

Reviewed: Mar. 16, 2005
Excellent! Skip the cinnamon. In my opinion it's better without. I've had it both ways, and I think it's too overpowering in the crust, and distracts from the delicate cookie/cheesecake flavor. A new favorite that got overwhelmingly rave reviews. Everyone said it was the best cheesecake they had ever had.

Friendship Soup Mix in a Jar

Reviewed: Nov. 15, 2004
I used 2 packs of onion soup mix in place of the bouillon granules and onion flakes and I omitted the bay leaves. It worked out great. Any pasta will work for the alphabet pasta. The soup is quite thick, and will need stirred often to keep from burning. Adding more water helps. I used 1 1/2 lbs. ground beef and it was quite satisfying.

Spinach and Strawberry Salad

Reviewed: Apr. 11, 2003
Excellent! I used only 1/4 cup of sugar and only 1 TBS of sesame seeds along with the 1 TBS poppy seeds. It was a nice light sweet dressing. I also used candied sliced almonds which gave it a nice crunch. Delicious! I used baby spinach so I didn't need to tear the leaves. Just mix up the dressing in a jar and use it for whatever size salad you need to make, chill the remainder. I've tried it with blackberries, and it's also good.

Spanish Rice II

Reviewed: Mar. 28, 2003
Try this with shrimp in it! My whole family thought it was wonderful! I modified this a little so the kids could eat it, decreasing chile powder to 1 tsp, using 1 C vegetable broth and 1 C water, and decreasing salt to 1/2 tsp. I added 1/2 lb bay shrimp during the last 5-10 minutes of cooking, and it made an excellent main dish. Our family needs a triple batch!

Hariton's 'Famous' Vegetarian Casserole

Reviewed: Mar. 26, 2003
I thought this was wonderful! What a great blend of flavors. I modified it a little, using less eggplant and substituting zucchini, omitting mushrooms, etc. The recipe is very forgiving and works well, staying withing the basic proportions of the ingredients. I decreased cooking time, cranking up the heat a little because I was on a deadline, and it was still great. With the higher heat, mine came out a little on the roasted side, so it was hard to recognize what each of the vegetables were, but I found that to our advantage with the kids. It became a melange of wonderful flavors!

Vegan Chocolate Cake

Reviewed: Feb. 5, 2003
I make a recipe similar to this very often. It makes a very moist and delicious cake or cupcakes, and is easily doubled for a 13X9 pan. In my recipe, I use 3/8 C oil and substitute 1 1/2 TBS lemon juice for the vinegar, (it does the same thing) There is no flavor of vinegar or lemon. I've used both. It's also great served with mint frosting. Mint Frosting: 3 TBS margerine 1 1/2 - 2 C powdered sugar 1 TBS soy milk or water 1/2 tsp peppermint extract green food coloring optional

Creme Brulee French Toast

Reviewed: May 29, 2002
Excellent Recipe! Great with baguettes! Bake until slightly toasty on top and then turn onto serving tray or cookie sheet when you remove it from the oven. If you cook it too long, the carmel gets hard.
