Easy Ice Cream Sandwiches

These were really good and really easy but only made 8 sandwiches with this recipe, not 12. They did not flatten very much so after I pulled them out of the oven, I flattened them a bit since they were still soft. The next batch I flattened before cooking.

Huge hit! I buy extra crusts because there is always more filling. However, sometimes I use the extra filling for omelets.

Slow Cooker Beef Stew IV

I followed the recipe EXACTLY. I really think it is missing something. I thought it was really bland. It looked and smelled wonderful and was tender and thick but just lacked flavor. I will make again but experiment a bit

Moist Cinnamon Rolls

This was very good and I cheated. I used a tube of pizza dough! I would only recommend that for a quick cinnamon roll fix but it worked. The filling and sauce were excellent. Next time I will use two tubes if I am too lazy to make the dough again. :) There was plenty of sauce for two, plus the dough does not grow like this recipe dough does.

Italian Spaghetti Sauce with Meatballs

Wow. I'm only rating the meatballs but mine turned out so tender by cooking them slowly with my sauce. I've never tried that before. I believe it also gave my sauce I a nice added flavor. I was worried that 30 minutes wasn't long enough to cook them through so I tried them at an hour and they were cooked through. I didn't have fresh bread crumbs so I used plain dried bread crumbs and only had half the amount called for (which was probably the correct ratio anyway). I did add a little oregano, basil and fresh garlic. They turned out perfect. The best ones I have ever made (and I married into an Italian family). Thanks for the recipe.

Bourbon Pecan Chicken

I thought this was pretty good. My family loved it. I also baked it after browning to prevent burning. It turned out perfect. I only used 4 breasts and used up all of the pecans/bread crumbs on them.

Quick Chicken with Asparagus and Provolone

I thought this was good and extremely easy. I didn't have provolone so I used 1/2 bread crumbs and 1/2 Parmesan cheese for the breading and shredded mozzarella instead of the provolone. I also used fresh asparagus and it turned out perfect. The chicken turned out very moist and flavorful. I think I may use low sodium chicken broth next time, though.

Jumbo Shrimp and Asparagus

This was really good and extremely quick! I happen to love ginger so I loved this recipe. I didn't have any shrimp so I used chicken breasts instead and it was still very good. I also didn't have any fresh ginger root so I used two tsp of ground ginger. I also thickened the sauce with a tbl of cornstarch mixed with a little water and served over white rice.

Spicy Chicken and Cilantro Wontons

I'm surprised no one has commented on the amount of cilantro. Maybe my grocery store sells cilantro in bigger bunches but I couldn't fit even one bunch into the food processor and the flavor was overpowering with only that much. All I could taste was the ginger and cilantro. Both happen to be flavors I love but it didn't make these wontons my favorites. My kids and husband liked them.

Ultimate Twice Baked Potatoes

I'll give this a 5 star because my teenage boys said this was the best Twice Baked Potato recipe that I have ever made. I thought it was excellent but not necessarily the best I've ever had. Definitely worth the effort and I double it for a nice quick left-overs.

After-Thanksgiving Turkey Soup

My son said that this was the best soup I have ever made! I did, however, sprinkle some ground sage and thyme leaves as others suggested and doubled the rice. It smelled wonderful but to me it lacked something. I will make again but try adding something else.

Awesome Carrot Cake with Cream Cheese Frosting

This was very good but I gave it 4 stars because I made a couple of changes because of others comments. I only used 1 cup of oil and it was still very moist, it didn't need any more than that. It took about 15 minutes longer to cook even with less oil. I also added an extra 1/2 tsp of cinnamon and 1/2 tsp of nutmeg to insure good flavor. It was almost not enough spice even with adding that. I used pineapple bits because I didn't have crushed. I used all of the frosting which gave it more flavor. My husband loved it but probably wouldn't have if I had made it as published.

Cha Cha's White Chicken Chili

Made a few changes to use what I had on hand and to adjust for my wimpy family. I didn't use any chili's or jalapeno and it was still spicy probably because I only used one can of broth because we don't like it runny. So, I added 4oz of sour cream and 4oz of cream cheese. I threw in a few diced tomatoes I had and some cilantro and cheddar cheese instead. It was very good and creamy.

Toasted Pumpkin Seeds

These were great! I sprayed them with vegetable oil spray and I did lower the temp to 275 degrees for 45 minutes. Then I shut off the oven and left them in another 15 minutes. They were nice and crispy and flavorful.
