Lower Fat Banana Bread I

pretty good. follow other reviews and add vanilla and cinnamon, use milk instead of water, applesauce instead of butter, half brown/half white sugar. I used white whole wheat flour and couldn't tell a difference.

they do melt quickly at room temp... but ARE exactly like Reese's. Will make again following other reviews and using less butter.

Irish Chicken and Dumplings

So good!! My first try at C&D and they were awesome!! I followed other advice and used 3 cans of cream of chicken and used chicken broth instead of water. And I just used Bisquick for the dumplings (shame on me I know, but I had that on hand and actually didn't have the stuff for the homemade ones). I'm so excited they came out well!

Fluffy Pancakes

These were definitely fluffy. And the batter was THICK. I felt like I was making drop biscuits. So I followed others advice and cooked on lower heat so they would cook all the way thru w/o burning. My only thought was: they didn't have a TON of flavor. Was expecting a little more. I followed the exact directions except for using buttermilk instead of milk+vinegar. Oh and I added a splash of vanilla. How could I give them a little more flavor? Add a little more sugar? Suggestions would be much appreciated b/c I would love to be able to make delicious, homemade pancakes that didn't come from a box. Thanks!

Vegetarian Chickpea Sandwich Filling

Yum. I've made this twice now and have been having it for lunch on thin rolls with sliced cucumber and tomato. So good. I don't usually buy celery, so left it out. Other than that, everything else is the same. It's definitely better after sitting in the fridge for a day.

Easy Slow Cooker Meatballs

Not sure what happened here, but they turned out hardly having any flavor. Was hoping to have these to use for dinner all week. couldn't even finish them. The only thing I changed was to use whole grain bread crumbs and added italian seasoning. I like the flavor of spaghetti sauce that I used, but it seems that adding cans of tomato puree and diced toms would just bland it up. Why not just use 2 jars of the sauce that I know I enjoy? I did also brown them in the oven to cut back on the grease.

Pumpkin Apple Streusel Muffins

I replaced half the flour with whole wheat, and couldn't tell the difference. Swapped out the oil for applesauce, and added a tsp of vanilla. Left off the topping. So good.

Banana Muffins I

These were a little bland.. Not very sweet I thought, and I don't usually like really sweet stuff. They also stuck to the muffin cup liners pretty bad; I thought the point of using liners was so that they don't stick to the pan. Overall, these weren't bad, but I have had better banana bread recipes so probably wont make these again.

Quinoa and Black Beans

yum and easy! only change, I added some green onion. Might be good w/ a little crumbled goat cheese, or something to give it some red color: either top with some fresh pico de gallo or add red bell with the garlic onion saute.

Best Beef Dip Ever

Really good. Had sandwiches all week long with this. I had a 2.75 lb roast, so I cut the garlic to 2 t, used 2 t of spices but did half rosemary and half thyme, 1/3 cup of soy, I was worried about too much of the soy taste, so added 1/3 worchestershire, 1 cuo of beef broth, and 3 cups of water. Cooked on low for 10 hours and it was falling apart and amazing.

Mayan Couscous

This was good. It was REALLY good before adding the lime/oil "dressing." The amounts are way too much, I think. I used 2 T of lime and oil, and it still made my couscous mushy. Also, I used 2 cloves of garlic, and could have used more.

Sweet Potato Minestrone

I thought this was okay. I enjoyed enough for a serving or two, but was less than excited to eat it for a couple more days (makes a HUGE batch). I added 1 can of garbanzos, which I didn;t think would make that much of a difference so I didn't sdjust the liquid. It turned out more like CHUNKY vegetable stew. I like veggies a lot, especially sweet potatoes, but if I make this again I might half the recipe so I am not stuck eating it for days. I would give it 3.5 stars if I could.

Black Bean and Couscous Salad

Awesome and easy and healthy. Can eat this for lunch all week. I too added cucumber and feta cheese. My limes didn't produce much juice so I think I ended up with less than 2 T, and I def wish I had a little more juice in it, but its still great.

Watermelon Fire and Ice Salsa

really good and a pleasant new twist from regular salsa. i love the combo of flavors that watermelon and bell peppers make. I did not use a whole jalepeno b/c I was afraid it would be too hot. so of course it wasn't hot enough. will use the recommended amount next tiem.

Cold Macaroni and Tuna Salad

This was pretty good, but as others said it needs the celery and green onion. I had to eat it with crackers to get a little more flavor, so some extra seasonings would help. it was nice to have a big bowl of this in the fridge though, I ate it every day for lunch.

Asparagus and Goat Cheese Quesadillas

These were really good, but I need to try them again. I used the entire 4oz of goat cheese as the recipe calls for. This was way to much as goat cheese very easily overpowers other flavors. I love goat cheese, but I couldn't even taste the asparagus, which I had sauteed in garlic. So I will definitely try again but use way less of the goat cheese per quesadila.
