Baked Chicken Nuggets

Everyone in the house loved these, from my littlest one to my picky husband! The only thing I did differently was to soak the pieces of chicken in a salt-water ice bath, then drain & dry before continuing with the recipe...just to give the meat itself a little more flavor and to help keep it moist. I have been told this needs to be a regular menu item at our house!

Banana Crumb Muffins

I normally don't review a recipe if I change it a lot, but I saw another reviewer looking for ways to add nutrition to these, so I thought I'd throw in my 2 cents. Because, these are obviously great as is, but I wanted folks to know they were very forgiving when you play around with them. These were wonderful, even after all my subs! I used 1 cup whole wheat flour & 1/2 cup white, plus 1-2 tbsp of wheat germ. I added cinnamon and nutmeg to the dry ingredients, cuz mmmmmm...I just love 'em. I replace the white sugar with mostly raw (turbinado) sugar & about a tbsp each of brown sugar & molasses. I added an extra egg to help make up for the wheat germ I added. I also used oil instead of butter & apple sauce to replace about 1/3 of the oil. And I mixed in about 1/2 cup of chopped pecans into the batter. They came out moist and very flavorful. YUM!!!

Chocolate Zucchini Bread I

Awesome way to sneak some veggies to the kiddos!! As usual, I substituted like crazy. But anything that I did would have only made it taste worse, and I thought it was incredible even after I sub'd it to death. I used all whole wheat flour, I cut the oil to 1/4 cup & added 1 cup of applesauce. Then I added 3 Tbsp of molasses & used raw sugar (which I cut to 1 1/2 cups). Also, I didn't have squares of chocolate, so I sub'd 6 Tbsp of cocoa powder & added it to the dry ingredients. So even after all of those healthnut changes, it turned out delicious. And it's even better if you sprinkle some mini chocolate chips across the top of the loaf when you pull it out of the oven. Mmmmmm...

Beth's Spicy Oatmeal Raisin Cookies

These are fantastic!! I even replaced all of the flour with whole wheat & no one even noticed. I also replaced the cloves with nutmeg, and used raw sugar for the white. I am sure the recipe is wonderful as is, but I was very pleased that the replacement of whole wheat flour produced such a wonderful cookie. My picky husband even though it was great. They stay nice & soft for days. I've made them 3 times already! YUM!!

Vanilla Sauce

I took the other reviewer's suggestions and cut the water to 1 Cup and bumped up the cornstarch to 2 Tablespoons. I thought this was very good. I used it over a dense, moist cinnamon cake (much like bread pudding) with vanilla ice cream and it was amazing!! I can't think what else I would use it on, but it was exactly what I needed at the time!

Whole Wheat Honey Bread

I thought this was absolutely fantastic!! I went pretty much by the recipe. I did use the Basic/Light setting on my breadmaker, versus the Wheat setting. But I realized later that this same exact recipe came with my breadmaker for the Wheat/Rapid setting. I'll try that next time. I am anxious to get some vital wheat gluten and try it with that next time to see if I could get it a little lighter, but I will make it again either way. I plan to start making this for daily-use. Forget paying $3 for basic store-bought loaves!

Cranberry Bars

I thought these were wonderful. I followed the recipe and they came out great. I added them to an assortment of cookies & fudge on my holiday cookie tray. Everyone loved them. I could have eaten them all myself, and I'm not usually a big cranberry fan. Yum!!

Stovetop Banana Pudding

RUN AWAY!! Why, oh why didn't I read the reviews before making this recipe? I was so caught up in finding a stovetop recipe using flour & eggs like my mom used to, that I failed to notice there was NO SUGAR in this recipe. And the flour to milk ratio was WAY off. The mixture turned to paste on the stove long before it reached boiling. I managed to add enough milk & sugar to make it somewhat palatable, but it still wasn't good at all. I think the person who submitted this might have made some typing errors.

Can I just say "Oh Yea! That's some good stuff, man."? It honestly tastes just like the bread from the Macaroni Grill. My husband and I couldn't quit eating it. Very Good!

Lasagna Alfredo Roll Ups

This was excellent! I took some of the other reviewers' suggestions by adding chopped chicken that I had cooked with garlic and Italian seasoning and some mozzarella to the filling. And I stuffed mine in manacotti shells. I also added some shredded carrot to the filling for added color and nutrition. It was very good. Also great to prepare ahead of time and keep in the fridge or freezer until ready to bake.

Cream Cheese Sugar Cookies

I had been looking for a great sugar cookie recipe, and my search is over. These were the best I've had, and they had the perfect texture...soft but not too fragile. The cream cheese adds a definite taste to the cookie, which to me was wonderful.

Double-Decker Fudge

This fudge was wonderful! It was the first time I've ever made fudge, and it turned out perfectly. I took it to a holiday party, and everyone raved over it. Will definitely be making this every year!!
