Lemon Curd Cookies

I'm giving this a 3 star, only because the cookie and the filling were good. But putting it together we had lots of problems. The cookie top would slide off of the bottom and most of the lemon ended up on the counter. I also thought there was to much cookie and not enough filling.

Rice, Asparagus and Cucumber Salad

I used the leftovers from dinner last night to make this salad for lunch today. I did make some minor changes. I did not use any oil and I used honey instead of white sugar for the dressing. The dressing was a little runny but still held nice to my spring mix (that’s usually what I have on hand). Also, I used dill seed (grabbed the wrong bottle off of Penzey’s shelf) instead of fresh dill. I think fresh would definitely be better. All in all I liked the recipe very much, thanks..

Butter Bean Burgers

Made these last night for dinner. I followed the receipe except I omited the cheese (trying to cut back), and I used a few dash's of hot sauce. I loved these, they do have a different texture than most other "bean" burgers, but I think that's what makes them good. The only thing I think I did wrong was to make the patties to thick. I have them today for lunch and I will see how they turn out re-heated.

Spinach Quiche

WOW, this was great!! Made this for dinner last night as I'm tired of the same old vegetarian dishes, even my meat eating husband like it. I used what I had left of my fresh feta cheese and cut back on some of the cheddar cheese. It still was great. Re-heated the next day for lunch and it was still moist and flavorful. Thanks for the recipe.

Cream of Mushroom Soup I

I made this last night for a "quick" dinner, it was wonderful!! It made enough for my Husband and Myself with just a little left over for lunch the next day. I would double this recipe the next time around. I used milk instead of the cream and also used Marsala wine (that was all I had). Even with the subsatution's it turned out great.

Chicken Breasts Pierre

Fruit Pizza I

I hate to repeat every other review but this was fantastic. It makes a very large "pizza" we got more than 10 servings. I used strawberries, kiwi and blueberries. EXCELLENT!!

Aunt Mary's Eggplant Balls

This recipe was very tasty. I didn't have enough breadcrumbs as called for in the recipe so I used the eggplant to stuff portabella mushrooms. After a trip to the store the next day I made "hamburger" patties with the leftovers. I found that if you coat the burgers with breadcrumbs they bake better and don't stick to the pan.

Basic Ham and Bean Soup

Black Bean and Salsa Soup

I enjoyed this soup very much. I also think you could add anything to this "basic" soup. I added an additional can of black beans after processing. I think in the future I might add onions, or even thin the soup slightly and add rice.
