Cinnamon Cookies I

I loved these, especially paired with fresh berries. They were a hit with the whole family. The only issue is that these cookies should be taken out of the oven before they're brown, since they are burnt at that point. I baked mine 9:30 at 325 degrees.

Mocha Meringues

These came out of the oven flat and deflated looking. The flavor was excellent, but the texture left something to be desired. They didn't dissolve in the mouth the way meringues usually do, and were fairly hard. I'll make these again to see whether my hunch about beating them more is true, but will also try other recipes.

Iced Pumpkin Cookies

This cookie was very cakey, and the taste reminded me of pumpkin pie. I covered the cookies in pecans and chopped cranberries before baking them, which made them even better! These were a bit too sweet for me (even without the icing), so I think I'll cut back on the sugar next time. I've been thinking about adding 1 cup applesauce instead of pumpkin puree and some ginger to make apple ginger cakes. I'll definately make this recipe, or some variation thereof, a lot in the future!

The Best Rolled Sugar Cookies

When I finally tried this recipe with white sugar (not brown!), they turned out pretty well. I made small cookies (~1 inch in diameter), and the recipe yielded at least 120. I chilled the dough overnight and then baked the cookies for 6 minutes.They were too bland, but I made lemon icing (milk, lemon extract, food coloring, powdered sugar) that was heavenly. A lovely melt-in-your mouth, sweet and buttery cookie.

Oat Applesauce Muffins

These muffins burnt really badly in 30 minutes, and were very difficult to get out of the muffin tins. They also had a little too much tang...perhaps that was the buttermilk. Otherwise, very good. I added 1/2 - 3/4 cup chopped apple and a little flax seed and wheat bran.

Soda Pretzels

I initially disliked the taste of these pretzels, which reminded me more of bread than pretzels. After a few days, however, the honey taste came through-and they taste great!

Gingerbread Men

I added cinnamon to make them spicier, and applesauce in the place of some molasses. I forgot to chill the dough, which didn't seem to have too much of an adverse effect. A word of caution: the cookies came out of the oven squishy after 12 minutes, but hardened a ton as they cooled.

Pumpkin Nut Muffins

These had more of a pumpkin taste than the Pumpkin Spice Muffin recipe, but still not quite right. I had to use the 24-muffin measurements just to make a dozen, which was somewhat annoying. Still, they were good!

Pumpkin Spice Muffins

This recipe has way too much nutmeg in it; it comes out like nutmeg-flavored dough in a muffin tin. The pumpkin was really hard to taste; perhaps it needs some more sugar or something to bring out the flavor. I couldn't eat these muffins hot, but they tasted better after being in the refrigerator overnight.

Irish Brown Soda Bread

This recipe made delicious loaves of heavy, old-fashioned wheat bread, with a thick crust. I added about 1/2 cup more oatmeal, and a little bit of water to make up for it.

Low Fat Apple Bran Muffins

Incredibly heavy and satisfying muffins, but the apple gets lost along the way. Here's my improvements: I add 1/3 cup flax seeds, 1/2 cup rolled oats, 1 cup diced apple, and substitute 3/4 cup applesauce for grated apple. A family favorite!

Egg-Free Low-Fat Oatmeal Cookies

These tasted good, but turned out as balls of flour and applesauce! They didn't rise or anything, and came out of the oven in the same shape they went in, without spreading or anything. I guess the recipe is just too healthy to work.
