Beth's Spicy Oatmeal Raisin Cookies

I used all butter (unsalted) and added an additional 1/2 teaspoon baking powder and a shake more cinnamon. I also soaked the raisins before adding to the cookie dough. I scooped out the cookies onto a large baking sheet and refrigerated the dough until well chilled. As each batch was baking, the rest remained in the fridge. This resulted in a nice thick cookie, just the way my daughter likes them. This has become her new favorite cookie. Thanks Beth!

Apple Matzo Kugel

Mmmmmmmmm Mmmmmmmmmm Good! This is delicious. A wonderful addition to my Passover recipes although I am sure I'll be making this throughout the year. Thank you for a wonderful recipe. :0)

Passover Rolls II

My recipe for these rolls is a little different. I use 1 cup of water and 1/2 cup of oil. The water and oil are brought to a boil together. I divided the mixture into 12 piles and then rolled the mixture into balls rather than dropping them on the cookie sheet. My bake time was 45 minutes. These rolls looked beautiful and were delicious! A wonderful addition to any Passover sedar.

Lemon Ice I

I made this last night and my family loved it! Make sure you mince the lemon zest as teeny as you can. I decreased the sugar to 1 1/2 cups and increased the lemon juice by quite a bit as we like things very tart. I would suggest adding the lemon juice a tablespoon at a time until you have the tartness you like. (As the recipe is written, I think the lemon ice would be extremely sweet.) Once processed, make sure you let the lemon ice age in the freezer in a tupperware container until it is a nice scoopable texture. (My kids ate some straight out of the ice cream maker and loved it soft as well.) Very nice and refreshing for a warm Southern California evening. You should try this one.

This was delicious. Eat it as a salad with the toasted pita pieces or fill an untoasted pita with the salad mixture for a wonderful vegetarian sandwich.

Coconut Cream Cake I

I made this cake for Thanksgiving. It went together easily. Everyone seemed to enjoy it. I toasted the coconut before I sprinkled it on the top. It made for a beautiful presentation. I however, am not a big fan of sweetened condensed milk. The next time I make this cake, I think I will microwave the cream of coconut until it is runny and pour it over the hot cake without using the sweetened condensed milk.

Crustless Spinach Quiche

Delicious, quick and easy. I did make a few changes....I used two boxes of spinach, red onion and swiss cheese. Less eggy than normal which I like a lot. This is a fantastic addition to a low carb diet. Next time I'm going to add some sliced mushrooms.

Burrito Pie

This was great! I used corn tortillas as I don't like flour ones in casserole type dishes. This went together quickly and was delicious and satisfying. I left out the green chilis and used plain petite diced tomatoes as I was afraid it would be too hot for the kids. Everyone loved it and this is definately something I will make again. (I'm thinking of adding cheese directly to the mixture and using it as filling for fried burritos.)

Kettle Corn

I used 3 tablespoons oil and it came out perfect! This is DELICIOUS. Quick and easy. The kids will love it. I followed the advice of others and popped one kernel first and then added the rest as well as the sugar, gave it a stir and started shaking. Yummy!

Buche de Noel

This recipe was easier than I had thought. The cake is dense and wonderfully chocolaty and chocolate whipped cream.....how can you go wrong. Made this for my Mom's birthday and it was thoroughly enjoyed. Try this recipe...you won't regret it. (Make sure you let the cake cool at least 10 minutes before turning it out on the towel)

Chewy Coconut Cookies

This recipe was simple, quick, and the cookies are delicious. Next time, I think I will add some chopped macadamia nuts and maybe drizzle a little chocolate over the top. (I used a cookie scoop and only got 23 cookies out of the recipe.If you use a scoop, bake for 13 min.)

Chocolate Cavity Maker Cake

This cake was quick and easy to make. I sprayed the bundt pan with Pam, didn't use any flour and had no problems with the cake sticking. I did let the cake cool for 25 minutes as previously suggested before removing it from the pan. I used Kahlua as the chocolate liquor and think next time I will try something else. The cake baked beautifully, was dense and delicious. I melted some white chocolate and drizzled it on top of the cake once it was cool. The contrast between the white chocolate and the dark cake was beautiful. I will definately make this cake again.

Sour Cream Coffee Cake III

This coffee cake is very moist with a fantastic flavor and texture. I served this to friends and they all enjoyed it. I am personally not a big cinnamon crumb topping fan, so next time, I am going to stir some mini chocolate chips into the batter and swirl some raspberry jam on the top.

Easy Key Lime Pie I

Made this last night. It went together in less than 5 minutes. I added a little more lime juice as I wanted it extremely tart. I also added one drop of blue food coloring to get a pale green color. Easy as pie as they say. However..... considering the multitude of rave reviews, I was a bit disappointed in the flavor. Yes, it was tart, but it had that familiar "condensed milk" pie flavor underneath.

Almost No Fat Banana Bread

My 8 year old daughter and I made these as muffins this morning. They are very tasty and moist. The use of unsweetened applesauce instead of oil is an added bonus. I will use these on Weight Watchers, (3 points per muffin).

Southern Praline Pecan Cake

This cake was delicious and so easy. Everyone in the house enjoyed it, with the exception of my 8 year old daughter who doesn't like nuts. I used 1/2 cup oil and next time I will use 1/4 cup, as it was almost too moist. I would suggest making it the day before you want to eat it and letting it sit. This recipe would also be delicious using a chocolate or german chocolate cake mix.
