Brown Sugar Meatloaf
I thought this recipe was extremely easy. However, I made some significant changes. To be honest, I was too lazy to go to the store to pick up ingredients so I substituted quite a bit and it turned out wonderful. I only used 1/4 cup of brown sugar as other have recommended. Instead of ketchup, I used enchilada sauce (this was the improv part, but it turned out AWESOME). I also went with my theme and added corn. What a delicious dish! I didn't add milk or eggs (the milk I forgot to add and the egg I didn't have), but I did add garlic. I also poured the sauce on top instead of the bottom. This is a definite new favorite!

Chicken Pesto Pizza
Awesome!!! I added mushrooms and sun-dried tomatoes. Easy and tasty.

Elegant Orzo with Wilted Spinach and Pine Nuts
I have made this several times. The only reason I gave it 4 stars is that it needs a little more flavor. I use sun-dried tomatoes instead of regular. I also add a little more balsamic vinegrette (and less oil).
