Profanity Salmon

The onions did not cook at the same speed as the salmon for me, so I ended up scraping them off. Also my family really loves wasabi so I added more, more, more. I would probably pan-cook the onions and green peppers first next time, or cut them up really really small and use fewer of them. It was definitely tasty and I would try it again.

Baked Dijon Salmon

I liked the recipe. Made it according to the directions. I seasoned the salmon with salt and pepper first, then added a thick layer of the butter sauce followed by the breadcrumb mixture. The topping, while tasty, was pretty dry. It was tasty enough to try again, but next time I will probably try mixing the breadcrumb mixture with the honey-mustard-butter mix and then spread it on top. My salmon was about 1 1/2 inches thick at it's thickest. I used a convection oven for 15 minutes on 400 and it came out perfectly cooked.

Ground Beef 'Wellington' with Fennel

My family really liked the flavors in the meat. I did not have enough time to cook the meat into small meatloaves, so I cooked this as a crumble in a skillet, then added some butter, flour and milk after the meat was cooked to make a gravy, and served it over 10 minute brown rice with a green vegetable. Very good and quick for a weeknight meal.

Quinoa Tabbouleh

I love quinoa tabbouleh. It's even better than the original. The quinoa in the recipe gives just the right texture and the whole thing tastes fresh and satisfying. Great for a picnic or just snacking.

Pork Marsala

Maybe it was the brand of Marsala I used, but this was way too sweet as written. I corrected the flavor with lemon juice and salt. The texture of the pork was tender. I was glad that I really browned the pork before adding the mushrooms as this helped to provide a depth of flavor. Served with asparagus and cooked carrots. My family declared it good enough to make again.

Roasted Veggie Pasta

This was AWESOME. I thought it would be too much red pepper, but after roasting it was fine. I turned up the oven to about 400 degrees and roasted the vegetables a little longer than the recipe called for. I put the tapenade and parmesan on the side since not all of my family likes these ingredients. Even without these, it was very tasty and soooo aromatic.
