Sooo happy with this recipe! My mom, who has never wanted to let go of her old recipe for meatloaf, liked this a lot and even had me make it twice in one week! I did make some changes to it, however, so here goes: first, skipped the ginger; next, I sauteed 1 onion, about 2 celery stalks, 1 green pepper, and 2 cloves of garlic in oil before adding to meat. I did add closer to 2 lbs of ground beef, as well. Also, besides the veggie saute, I add lots of Worchestire sauce, some steak sauce (just a little), and I use bread crumbs instead of crushed crackers. Also, I pour a little steak sauce on top of the ketchup at the bottom of the pan. I just like the zing it gives. Anyway, seems like a lot of changes, but I still have to thank this recipes for serving as a base. I was very skeptical at using the sugar and ketchup at first, but now I make my meatloaf with it everytime. It just gives it that awesome glaze at the bottom.
