Beef Enchiladas II

A very delicious meal! The best thing about this recipe is that it is wonderfully simple and easy. It being such a basic recipe means that you can make it as directed or add on to the ingredients to get even more satisfying results. My changes were mostly in the meat, which I doctored up like so: besides the onion, I added a generous amount of garlic (I'm a garlic freak), a can of mild green chile peppers, and half a pack of basic taco seasoning. Yum Yum. After that bit it is as easy as pie. You just roll everything up and bake and you've got dinner! This is also a wonderful meal to eat while on a budget. The last two times I've made this for my family, I served it with cornbread, Spanish rice, and extra enchilada sauce.

I tried this recipe for myself and I really enjoyed it. The only change I made was that I used honey instead of sugar and was a little more liberal with the cinnamon. I love this recipe and will definitely make it again . Thanks!

Vegetarian Korma

This dish is absolutely delicious and satisfying! The recipe turned out wonderfully. I followed it pretty exactly, only, because I wanted something without dairy in it, I used coconut milk instead of the heavy cream, I used finely chopped almonds instead of cashews, and I used 1 less potato than called for, as the potato I had was pretty sizeable. I think adding another potato would have been way too much! Otherwise, a superb entree that tastes heavenly and exotic next to jasmine rice. Yum yum! If you try this with the heavy cream and like it, I suggest making it again sometime with the coconut milk. The flavor is distinct and rich.

To Die For Blueberry Muffins

Might as well add to the list of awesome reviews for this recipe, because these muffins were really, really good. I was brought up thinking blueberry muffins should taste like the Jiffy box brand. How wrong I was! I was relcutant to make these muffins, because I'm not much of a baker, but they came out so divine, I still can't believe it. My whole family raved about them, and afterwards there were maybe one or two left out of the twelve I made. They made HUGE muffins, and the streusel topping was the kicker. If the batter looks really thick, don't become alarmed (like I did). The muffins still come out aces.

Brown Sugar Meatloaf

Sooo happy with this recipe! My mom, who has never wanted to let go of her old recipe for meatloaf, liked this a lot and even had me make it twice in one week! I did make some changes to it, however, so here goes: first, skipped the ginger; next, I sauteed 1 onion, about 2 celery stalks, 1 green pepper, and 2 cloves of garlic in oil before adding to meat. I did add closer to 2 lbs of ground beef, as well. Also, besides the veggie saute, I add lots of Worchestire sauce, some steak sauce (just a little), and I use bread crumbs instead of crushed crackers. Also, I pour a little steak sauce on top of the ketchup at the bottom of the pan. I just like the zing it gives. Anyway, seems like a lot of changes, but I still have to thank this recipes for serving as a base. I was very skeptical at using the sugar and ketchup at first, but now I make my meatloaf with it everytime. It just gives it that awesome glaze at the bottom. Cheers to Starbuck for providing this recipe, it's the best.

Chicken Fettuccini Alfredo

I agree with the other reviewers who said this dish was a winner. It was absolutely delcious. It was very easy to make, and the sauce came out so savory and thick. I especially loved the addition of tomatoes in the cheese sauce. My only alteration was that I used a whole 6 oz. tub of shredded three cheese blend (asagio, romano, and parmesan) and about another 1.5 c of shredded parmesan instead of colby and monterey cheeses. It was so excellent, my whole family loved it! I want to eat this at least once a week!

Creamy Chicken Lasagna

Wow! This lasagna was amazingly delicious! I made it for my family and everyone was really happy with it. I have never had lasagna before without ricotta cheese, so I was a little nervous about using cream cheese, but I was proved wrong. The cream cheese makes for a really rich, thick, creamy filling. Mmmm-mmm. I even used some leftover Mascarpone cheese in the filling. As for additions, I sautéed one large onion and 2 cloves of garlic and added that to the mixture, along with Italian seasoning, dried basil, and some freshly chopped parsley, along with salt and pepper. Also, I pan-fried my chicken in olive oil instead of boiling it. It all came out wonderfully. I definitely will make this again and again!

Daria's Slow Cooker Beef Stroganoff

My family and I really enjoyed this beef stroganoff, and I was especially happy with it. I really loved the convenience of putting it in my slow cooker. It was extremely delicious and very easy to make. I used cubed stew meat and pre-cut onions, so aside from chopping mushrooms I had very little to do as far as extra work. I didn't change much at all with this recipe; I only used fresh mushrooms instead of canned and put in extra Worcestershire sauce. We served it over noodles and it was so tangy and savory. Very wonderful and will definitely make again.

Slow Cooker Taco Soup

My family and I loved this soup! I loved how easy it was to make, just throwing everything together. The only changes I made were that I used about 4 cups of frozen corn (per my mom's request) and I did drain the kidney beans. I have also used black beans on another occasion in place of kidney beans and that worked great as well. I like to eat mine with cornbread and crumbled tortilla chips on top! This is definitely a keeper in my house.
