About this Cook
I am the sole cook in my family, consisting of me, my little brother, and my mom. I am a student right now, so cooking is something I have to do mostly on the weekends. Usually I plan special dinners on the weekend, so we eat more light during the weekday.
My favorite things to cook
I love to cook with my slowcooker. I just recently recieved it as a gift for my birthday, and haven't stopped using it since! It is the best thing I could ask for, and now nothing is better than coming home from work or school to have a delicious meal waiting for us! Besides that, I also love to make soups, and I make a lot of chicken dishes. Not particulary fond of beef or pork, but do eat it occasionally.
My favorite family cooking traditions
My family on my mom's side is German and Irish, so I've grown up eating a lot of meat and potato meals. Sauerkraut and bratwurst is a meal we have now and then, although I try to encourage my mom to eat healthier alternatives more often ;) Also we have a lot of recipes from my German grandmother that we cherish as invaluable.
My cooking triumphs
My greatest cooking triumph was preparing a full, authentic Indian meal for my family. We have a very small kitchen and meager cooking appliances, but I pulled this dish off and it was amazingly good! I felt proud of myself for tackling such a huge fare, and when it was all finished I didn't even want to eat it because it looked so beautiful and fancy. Still get raves about that night!
My cooking tragedies
I have managed to ruin everything from meatloaf to corn chowder to homemade spaghetti sauce. My growth as a cook has been slow but steady for sure! Will never forget the time I tried to make a chicken and biscuit casserole and put way to much nutmeg in the gravy. My mom and brother could barely eat it.

Vegetarian Korma
This dish is absolutely delicious and satisfying! The recipe turned out wonderfully. I followed it pretty exactly, only, because I wanted something without dairy in it, I used coconut milk instead of the heavy cream, I used finely chopped almonds instead of cashews, and I used 1 less potato than called for, as the potato I had was pretty sizeable. I think adding another potato would have been way too much! Otherwise, a superb entree that tastes heavenly and exotic next to jasmine rice. Yum yum! If you try this with the heavy cream and like it, I suggest making it again sometime with the coconut milk. The flavor is distinct and rich.

To Die For Blueberry Muffins
Might as well add to the list of awesome reviews for this recipe, because these muffins were really, really good. I was brought up thinking blueberry muffins should taste like the Jiffy box brand. How wrong I was! I was relcutant to make these muffins, because I'm not much of a baker, but they came out so divine, I still can't believe it. My whole family raved about them, and afterwards there were maybe one or two left out of the twelve I made. They made HUGE muffins, and the streusel topping was the kicker. If the batter looks really thick, don't become alarmed (like I did). The muffins still come out aces.

Creamy Chicken Lasagna
Wow! This lasagna was amazingly delicious! I made it for my family and everyone was really happy with it. I have never had lasagna before without ricotta cheese, so I was a little nervous about using cream cheese, but I was proved wrong. The cream cheese makes for a really rich, thick, creamy filling. Mmmm-mmm. I even used some leftover Mascarpone cheese in the filling. As for additions, I sautéed one large onion and 2 cloves of garlic and added that to the mixture, along with Italian seasoning, dried basil, and some freshly chopped parsley, along with salt and pepper. Also, I pan-fried my chicken in olive oil instead of boiling it. It all came out wonderfully. I definitely will make this again and again!
