Easy and Elegant Pork Tenderloin

I had no time to marinate and I NEVER make good pork, so I tried this tonight. It was WONDERFUL...so good that this is the first review I'm writing! All three of my kids asked for more, and they won't eat anything! Here's what I did: trim fat, coat with olive oil, sprinkle with salt, garlic powder, onion flakes and cracked pepper. Then I refridgerated it in a bag for an hour, but I think it would have been fine without. Then I poured some Progresso Italian Bread Crumbs into the bag and shook it until coated. Baked at 425 for 45 mintues. It was mouthwatering. Served with mashed potatoes and peas and it was a huge hit with almost no work. Try it!

Baked Ziti I

I cook all the time and this is the MOST REQUESTED recipe I've ever made. Never found a single person that didn't LOVE it, and they don't know why. It's the secret ingredients--sour cream and provolone--that make a world of difference. I've made it meatless, with ground sausage and ground beef, and sausage is our favorite but it's very rich. Just be sure to cover the noodles with sauce so the top ones don't get crunchy, and cover the whole thing with foil. I've cooked it twice as long by accident and it was still fine. Enjoy...everyone else will!

Honey Baked Chicken

This is 5 stars for ease and for the consistency of the chicken...very moist when finished. I'd say it's more like 4 stars for taste...I'd like to get it to carmelize better and brown up, but it never did. Everyone loved it anyway. GREAT choice for a quick meal!!

Spicy Bean Salsa

SOOOO easy! I even used Rotel instead of diced tomatoes and jalapenos, and I used Garlic Expressions salad dressing because it's all I had. I also used pintos instead of black eyed peas. If you have the corn, onions and black beans with something tomatoe, you can't go wrong!!!

Fluffy Pancakes

Everyone says they are the best ever, even my kids! I just made them with canola oil instead of butter because it's all I had, and they were still great. We usually add chocolate chips or blueberries. Really great and super easy....one bowl and a measuring cup is all you'll dirty! Love it!

Zesty Slow Cooker Chicken Barbecue

This was a staple in our house until I overdid it...now I can only break it out once every other month or so. It's THAT EASY and always delicious...and so much healthier than pulled pork, which we love. EASY EASY!

Sweet, Sticky and Spicy Chicken

AWESOME AWESOME chicken. Used ground ginger and 1 tbs. of hot sauce but could hardly taste it. If you like spicey, use both. My came out VERY sticky! Here's what I did: cut up chicken into small chuncks, put in bag with flour and shake until lightly coated. Put in frying pan at #8 of 10...very hot, until started to really brown. Took several minutes. Then I added the sauce, tossed, dropped to #3 and put lid on until rice was done, probably 15 minutes. Continue to use the same pan even though the chicken sticks and burns on the botton!!!! All that stuff makes it sticky! Will make again and again!

Oatmeal Peanut Butter Cookies

Best flavor of any OC I've ever made....could hardly stay out of the batter as each batch baked. I used 2 sticks of sweet/salted butter instead of shortening and margarine. Came out perfect...although I only got 36 out of this amount.

Quinoa and Black Bean Chili

Really delicious. I didn't miss the meat at all! Add a spoonful of sour cream and it's even better!!! I didn't use the cilantro or jalapeno or chipotle peppers because I didn't have them, used canned corn and a mix of diced and stewed tomatoes and it was still fabulous!! Can't wait to eat the leftovers tomorrow! (PS Husband loved it too, and he's a meat eater.)

Easy Shake and Bake Chicken

My family loved this! I used skinless, boneless breasts, cut each in half and pounded until they were about the same thickness. This is important so the thin ones don't dry out! I gave it 5 stars because all 5 people in my family at it, but I used "I can't believe it's not butter" instead of real butter which I will not do again! I thought it had a funny taste but was still good. There was also much more butter than necessary. You can play with the seasonings however you like. I added garlic salt and no sage, and threw in a few things here and there. The high heat makes this dish work, and I think it could have used a little less time given that the breasts were think. Go for it...this one is yummy.

Spaghetti Sauce II

Amazing authentic flavor...thick, sweet and spicy, great with or without meat. I usually add a tad more wine, garlic and red pepper flakes because we like a lot of flavor. You CANNOT MESS THIS UP...important for anyone nervous about making your own Sunday gravy. Just go for it...you can always tweak as you go.

Savory Italian Sausage Sauce

This is a very special sauce, extremely restaurant quality. I used half of a regular onion instead of green (sautéed with garlic) and omitted the mushrooms. I also used a large can of crushed tomatoes instead of the 14 oz stewed and sauce since that's what I had on hand. I personally thought it was a little sweet so I might cut back on the sugar next time. Could have been the wine I used...it was a mild red table wine and may have been too sweet. I would recommend adding the sugar to taste rather than right from the get go. Tomato paste and sweet sausage also added sweetness, so I may just use spicy next time. But this is now my favorite sauce of all I have tired! Make sure to have bread for dipping and sopping it up!

Mexican Rice III

This may be one of the best and most authentic things I've ever made! Actually, my 12 year old made most of it while I assembled enchiladas. It was easy and the flavor is amazing! I didn't use jalapeños since I didn't have them, but everything else was perfect!!! You'll never want to eat that boxed mexican rice again!

Tomato Soup

I gave this a 4 because something was off...some suggested you puree it. That would have helped since my tomatoes and onions were still chunky. Others added some cream. That may have done the trick. I also didn't have carrots or celery so I didn't use them and needed to add about 2 table spoons of sugar because it was so acidic. Even with all this said, I think this was super easy and had a great flavor. I'll definitely make it again!! Very healthy and tasty.
