Quinoa and Black Bean Chili
Really delicious. I didn't miss the meat at all! Add a spoonful of sour cream and it's even better!!! I didn't use the cilantro or jalapeno or chipotle peppers because I didn't have them, used canned corn and a mix of diced and stewed tomatoes and it was still fabulous!! Can't wait to eat the leftovers tomorrow! (PS Husband loved it too, and he's a meat eater.)

Tomato Soup
I gave this a 4 because something was off...some suggested you puree it. That would have helped since my tomatoes and onions were still chunky. Others added some cream. That may have done the trick. I also didn't have carrots or celery so I didn't use them and needed to add about 2 table spoons of sugar because it was so acidic. Even with all this said, I think this was super easy and had a great flavor. I'll definitely make it again!! Very healthy and tasty.

Baked Ziti I
I cook all the time and this is the MOST REQUESTED recipe I've ever made. Never found a single person that didn't LOVE it, and they don't know why. It's the secret ingredients--sour cream and provolone--that make a world of difference. I've made it meatless, with ground sausage and ground beef, and sausage is our favorite but it's very rich. Just be sure to cover the noodles with sauce so the top ones don't get crunchy, and cover the whole thing with foil. I've cooked it twice as long by accident and it was still fine. Enjoy...everyone else will!
