Fluffy Pancakes

Cheesy Ham and Hash Brown Casserole

Monster Cookies VI

These cookies are so delicious. I add walnuts to mine just because my family likes them that way. However, these don't make as many cookies as the recipe says it does. I use a regular sized ice cream scoop and it yields 30 cookies.

Lemon Meringue Cake

This is so delicious! Didn't change a thing, perfect as is. Separate your eggs when they are cold and let the egg whites sit at room temperature for 30 minutes. They will have more fluff to them when you whip them. Add sugar only at the end in small amounts at a time.

Zucchini Brownies

These are sooo good! I've made them twice and the 1st time, exactly as written. However, I agree with other reviewers that they had a bit of an 'after taste" so the second time I added 1/4 C more sugar in the batter. Perfect!! Thanks Marian!

Chicken Quesadillas

These are so awesome!! I did however change a few things that made it just as delicious but easier yet. I omitted the bacon bits, my family prefers none, and I used Rotel instead of chopping the peppers and onion. It's all in the Rotel. You can also buy it mild or spicy for a little extra kick. I layered a thin slice of cheddar on the bottom, chicken, Rotel, then the monterey jack. The cheeses on both sides keep everything together nicely. These work great on the George Foreman machine too.

Orange Cake

This cake is sooooo good! Friends and family will think you worked hard making it, but it's very easy. 1 change I made was I used only half of all ingredients for the glaze. The full amount seemed to make it soggier. This is my sister-in-law's favorite and I make it for her every year on her birthday, which happens to be on Christams Eve, so it doubles as a yummy dessert when our family is together opening gifts.

Apple Crisp II

First of all I have to say there are no words to describe this VERY delicious recipe. It's the best Apple Crisp I've ever had. I am known for altering all of my recipes to make them lower in fat, calories, etc. so I used 3/4 C Splenda and 1/4 C Sugar for the sugar, I used light margarine instead of regular butter whole wheat flour for half of the flour amount. It turned out terrific, we can't get enough of it at our house. And warmed with vanilla frozen yogurt on top- you've gone to heaven. Thank you Diane!!

Beth's Spicy Oatmeal Raisin Cookies

These were pretty good, but a little too spicy for my family. We like to taste more of the oatmeal flavor. Next time I'll halve the spices, including the vanilla.

Easy Toffee Bars

These are wonderful. I used the release foil,lightly buttered, and they came out of the pan easily. I also added nuts on top of the chocolate immediately after baking. Make sure to boil the butter/br. sugar mixture about 3 minutes so it will solidify.
