Chiles Rellenos Pie

I was skeptical about trying this recipe. I love the traditional chile rellenos with it's fluffy batter, but I was lazy. I went to the market and could only find Pasilla peppers. When I came back home and looked online, I found out that Poblano peppers are sometimes called Pasilla. The apparent problem is that you can't tell if the Pasilla peppers are hot or mild. I read online that sometimes one side of pepper could be hot and other side mild. We found that to be true. To my surprise, and my wife's would doesn't care for Mexican food, we loved it! I will make it this way from now on! A suggestion though, in the restraunts, they leave the stem on for decoration. Take off the stem, since that's were the seeds grow and makes the dish hotter.

Simply Divine Meat Loaf with Spinach

I thought it was so-so. I doubled the recipe, but only had 2.6 pounds of 15% fat ground beef. It was too dry for me, but my wife liked it. There was too much onion soup mix. Next time, I'm going to cut the onion soup mix in half, cut the bread crumbs by a third, double the spinach and use 20% fat ground beef. The meatloaf tasted better the next day. I ate it cold directly from the refrigerator.

Firecracker Fried Chicken Drumsticks

I like this recipe. 1 hour to marinate is not enough and 24 hours is too spicy for me. It depends on the pepper sauce used, I'm sure.

Baked Mushroom Thighs

I really love this recipe. It is quick to prepare, then you just shove it in the oven. It doesn't have a complex blend of tastes, but it's great for "Comfort Food". I added mushrooms to the gravy and in the last few minutes, I put the oven on Broil to crisp the skin.

Kelsey's Favorite Stuffed Green Peppers

I love stuffed peppers, unfortunately my family does not. With this recipe, I loved it, my wife loved it, my brother-in-law liked it much better than the other recipes and my son like everything but the bell peppers. None of the 3 liked the other recipe posted on AllRecipes.com. I reviewed the other reviews and changed some of the quanities and ingredients. I cooked 2 cups of rice in a rice cooker. I had 8 large bell peppers (kept whole), used 2.5 lbs of ground beef, 16 ounces of can tomato sauce, 15-16 ounces of can diced tomatoes, 15-16 ounces can corn and used only 1 cup of shredded cheese (since I didn't halve the peppers). I boiled the whole peppers for 8 minutes and I didn't simmer the mixture for 10 mintues before stuffing. Before I sprinkled the cheese, I added some ketchup to the top. Next time I going to add some cumin and mix the rest of the cheese into the mixture. I might halve the peppers next time because a whole one, although is nice for presentation, appears overwhelming.
