Turkey Wild Rice Soup II
Turned out just as I hoped it would. Perfect. I'm sure it is even better as written, I modified it a bit. Swapped the butter for 1/4 c of olive oil, used 2% evap milk, added 1/4 c grated parm cheese and some chopped green beans. Oh and I just chopped the carrots and added them in with the onions and celery. Cooked it on a low boil for about a half hour when everything was in the pot. Nothing like a great bowl of homemade soup like this one ????

Easy Herb Roasted Turkey
This recipe makes a tasty bird. But.....not a beautiful centerpiece. I love how flavorfull the addition of the herbs are and what I love most was the absence of butter. The olive oil browned the bird beautifully even uncovered ( I never needed to remove the lid to brown the turkey). I used garlic salt instead of powder and omitted the regular salt. I also rubbed the oil/seasoning under the skin. My complaints are; there was soooo much liquid that the wings were fully submerged and therefore never browed. It was if they were boiled. And.....the turkey just completely fell apart when trying to move it to a platter. I guess I really would only would care about this if I needed a very pretty "company" turkey centerpiece. Overall, great tasting, super easy recipe. I recommend cutting the liquid by at least half though.

Kahlua Glazed Ham
Really good! I used gingerbread kahlua( just sitting in my cabinet getting lonely) and a smaller precooked ham. The sauce was sweet but the dominant flavor is from the mustard. I was nervous about taking a chance using my gingerbread kahlua but everyone loved it including my 8 yr old son ( any alcohol gets cooked off). Even better the next day.... try it!
