Greek-Style Burritos

Very good. Marinaded chicken in Greek dressing and then grilled it. Cheated & Used Costco tzataki sauce On top. This is going into the rotation.

Chef John's Gazpacho

The best gazpacho ever. I chopped 1 tomato and 1/2 a cucumber. I tossed everything else in my Vitamix whole and blended. I added cilantro from my garden. Mine looked a bit brown, wondering if it was the cuc skin? Cilantro? Basalmic? worchestershire? Anyway, it tasted fantastic! Thank you, Chef John.

Pear Vinaigrette

Very tasty dressing! Great for winter salads. I didn't have white vinegar, so I used the dark balsalmic. I used about 1/4 cup oil. Makes a lot!

Ultimate Chicken Sandwiches

We really liked these. I used thinly sliced chicken breasts and only put them in buttermilk for about 4 hours. Kept all ingredients the same except dipped them in egg prior to the coating. I think the key is to cook them in a few tbsp of oil on the stovetop. Not as healthy but had the crunch of a restaurant sandwich. We added Franks Hot sauce to the top as well as bleu cheese.

Butternut Squash Soup with a Kick

Holy molly! This is one of the best things to come out of my kitchen in a long while. It's got some heat, but WOW! The flavor is fantastic. Coconut milk and fresh ginger makes this recipe. I used EVOO instead of butter and used just a few tbsps.

Chinese Chicken Wings

To be fair, I only marinaded these for 6 hours. Maybe overnight would have yielded more taste, but Hess were bland. Next time I will add some ginger, more garlic, and maybe some curry paste

Black Bean and Corn Salad II

This is FANTATIC! I use less EVOO, add the avocado just before serving. I make a big bowl on Sunday nights and then use as a salad much of the week. Very versatile. Have added grilled chicken, steak or shrimp to make it a main dish salad for lunch. Cilantro is a MUST!

Roasted Vegetable Orzo

Very good, colorful and versatile recipe. I loved the wine. Added some fresh basil, tomatoes, fresh mozzerella and cilantro because I had it. Could use a bit more kick. Will keep playing with it.

Chinese Chicken Salad III

Delicious as is. Tastes like a restaurant salad but is much healthier! I added some roasted almonds and some sesame sticks. Next time I will thin the dressing as it was pretty thick. I will also use less brown sugar as the PB has some sugar in it too.

Hamburger Steak with Onions and Gravy

Good recipe. Great with some upgrades. Burgers need more spice. Mayber some garlic? I needed to add more flour to make gravy thicker. Definately double the gravy and I would suggest using hamburger with more than 10% fat for thicker gravy.

Pixley On a Stick

Very good. I had to finish under the broiler for the bacon to be crispy. A little advice: put the toothpick on the SIDE of the chunk of chicken so you can flip it over and broil the other side. Served with honey mustard and would recommend the whole amount of sugar, but brown sugar. Great appetizer!

Ancho-Chipotle Salsa

Great recipe. Very versatile. You can make it hotter or not so hot. Didn't have ancho chilis so used more jalapenos. So much cheaper and yummier than the jarred stuff.

Cilantro-Lime Dressing

Delicious! Great blend of flavors. I used double the amt. of cilantro because I had so much and we love it. I may make it with less honey next time just to try a less sweeter version. I even planted some cilantro plants so I can make this all the time. My new standby recipe!

Addictive Sweet Potato Burritos

Healthy & Delicious! I used black beans and omitted the water. Turned out great! Sweet potatoes took a while to cook so next time I might use frozen. It made a ton and I am freezing for lunches/snacks.

Make Ahead Lunch Wraps

Five stars with a few changes: used left over black beans from dinner at a Mexican restaurant, so they were seasoned, used salsa instead of tomatoes and included fresh cilantro. Used less cheese and wheat tortillas to make it healthier. Had them for dinner and can't wait til lunch!

Shrimp Lemon Pepper Linguini

Very good! Tasted right out of your favorite Italian restaurant. Doubled the sauce, use Pam instead of EVOO and cut the butter in half to make healthier. I made with shrimp for my husband and chicken for me. Will be on the monthly menu. Delish!!
