Fried Ice Cream

Reviewed: Mar. 18, 2011
Loved this. Crushed Frosted Flakes in blender with cinnamon. Coated the ice cream twice for a thicker crust. Served over tortillas that i heated in a pan with butter and sprinkled with cinnamon sugar. Drizzled hot caramel over the top and whipped cream.

Creamy Guacamole

Reviewed: Mar. 17, 2011
A good base for a creamy Guacamole dip but it definitely needs some work to get it out of bland city and into flavorville. I substituted nonfat greek yogurt for cream cheese to make it smoother and more of a dip. I added cracked black pepper and minced garlic and tripled the worcester sauce. I t turned out pretty good with these changes but it would be very bland without them.

Roasted Root Vegetables With Apple Juice

Reviewed: Nov. 11, 2008
This turned out really well. I auditioned this for my Thanksgiving Vegtable Dish and it is a strong contender. The veggies came out golden brown and coated with sticky delicious apple/wine glaze. I would suggest beginning with alot more of the apple juice/white wine before reducing into a glaze as it all seemed to evaporate very quickly once in the oven. I had to adjust and drizzle the veggies with some olive oil halfway through the cooking process. I would even sprinkle the veggies with some cinnamon next time to capitalize on that rustic fall flavor. Also beware that clean-up can be tricky here. Make sure you lay down some tin foil that goes all the way up the sides of the roasting pan or are in for a clean-up nightmare.

Fruit Dip

Reviewed: Apr. 18, 2008
it came out well but I guess I am just not a huge fan of marshmallow fluff. Next time I will add coffee or chocolate liquor.

Avocado Shrimp Ceviche-Estillo Sarita

Reviewed: Feb. 25, 2008
This is pretty close to being very good. However, it turns out way too citrusy and acidic. Something needs to be done to balance out the acid taste.

Shrimp Couscous Salad

Reviewed: Feb. 25, 2008
A wonderful light dish that doesn't need any tweaking. I hate raw tomatoes so I kept those out and it still turned out really good.

Cocktail Sauce for Shrimp

Reviewed: Feb. 25, 2008
Very Good Recipe. I added a bit more sugar and left out the hot sauce as I like cocktail sauce more on the sweet side.

Shrimp Embrochette

Reviewed: Feb. 25, 2008
This was amazing. Needed a little tweaking though. I whisked together 1 egg and added half of it to the filling to help bind it together. I used Jumbo Prawns and seasoned them with Old Bay. I also cooked the Bacon in the microwave for 1 minute before wrapping around the Prawns so that the Prawns wouldn't overcook before the Bacon was done. I held it all together with toothpicks

Fried Butterflied Shrimp

Panko Bread Crumbs make a world of difference. I seasoned the shrimp with Old Bay before diping and coating with Panko. Only one coating is necessary. Restaurant Quality Fried Shrimp!

Citrus Shrimp

Reviewed: Feb. 25, 2008
This was a very good recipe but needed some tweaking. I used 2 limes instead of 3. I added a half-cup of orange juice, a half-cup of honey and a small can of crushed pineapple to the marinade. I marinated for 2 hours. After pan-frying the shrimp, I poured the excess marinade in the pan and reduced by half to make a sauce. I Toasted some coconut and added that to some white rice I made and poured the sauce over the rice and sprinkled the shrimp with some leftover toasted coconut. Delicious!

Caramel Bread Pudding

Reviewed: Feb. 25, 2008
This turned out really good. I followed the advice of some other reviewers and waited awhile for the hot water to really dissolve the brown sugar before slowly pouring it over the bread (not just dumping it). I made sure that the bread soaked-up all of the sugar water. I also slowly whisked the hot milk into the eggs to make sure the milk didn't cook the eggs. Then before putting it into the oven I sprinkled some chocolate chips over the top.

Grandmother's Bread Pudding

I just made the custard sauce for a different bread pudding recipe. I followed the advice of one other reviewer and added the orange zest of one orange and it turned out fabulous, creamy and delicious!

Sky High Yorkshire Pudding

Reviewed: Feb. 26, 2007
I don't know if this recipe is off or my oven is hotter than the temperature dial says it is. Either way, 25 minutes at 450 and my puddings were charred to a black crisp. I definitly recommend keeping a close eye on them as they cook.

Gyoza

Reviewed: Feb. 26, 2007
This turned out really good. I don't have a steamer so I just fried the wontons in a cup of oil in my wok. They turned out perfectly brown and crispy. Also, I cut down on the chopped onions and added some chopped green onions. In the future, I will add some asian chili sauce to the dip because i felt it needed some kick.

Irish Cream Chocolate Cheesecake

Reviewed: Feb. 26, 2007
This was the best cheesecake I have ever made. The only alteration I made was using 2 eggs rather than 3 to make the cake less rich. In the future, I swill add more Baileys as I could hardly taste it.

Emily's Famous Hash Browns

Reviewed: Jul. 7, 2006
This recipe was fantastic! The hash browns were golden and crispy on the outside and creamy in the middle. My girlfriend said she felt like hash browns with bacon and onions in them so I used this recipe as my starting point. First, I pan-fryed 6 bacon strips until crispy (next time I will use at least 8). Then I broke up the bacon into tiny pieces and added them into the mix with the other ingredients along with 1/2 red onion chopped, sea salt and cracked black pepper. Also, i made little hash brown patties rather than covering the whole pan. They really turned out nice.

Stuffed Peppers

This dish is just like mom used to make! One tip: add some chopped vidalia sweet onion to the ground beef when it is halfway done browning and delete the onion powder but double-up on the garlic powder.

Caribbean Crabmeat Salad

Reviewed: Nov. 17, 2005
This recipe sounded fantastic. However, I completely botched it up. I tried to use fresh mango, which I have never dealt with before and I had an awful time. I don't know if my mango's were not ripe yet but they were almost impossible to cut and they tasted extremely acidic. In fact, the whole recipe once I finished it tasted way too acidic. I tried to salvage it by adding extra honey, but it was too late. I had to throw it all out.
