White Chocolate, Fruit, and Spice Muffins

These have so many random ingredients that you can substitute pretty much anything for most of them. I actually followed the recipe fairly closely...changed the AP flour to half WW and half AP; used wheat germ and ground flax in place of the graham crumbs and left out the raisins. This doesn't make a very attractive muffin, but they do taste interesting enough.

Mocha Walnut Cookies

Really good and really easy to make. I halved the recipe but still used a whole egg and these came out cracked on the top like a gingersnap, but with a soft and chewy/flakey texture. Kind of hard to explain but really easy to eat!

Maple-Nut Cinnamon Rolls

I liked these rolls, but the dominant flavor seemed to be orange, rather than maple. It could have been because I couldn't find my maple extract so I left it out, but the zest seemed a little overpowering. I only used 1/4 cup of butter in the dough since 1/2 seemed like a lot to me, but I ended up using about 1/4 c on top of the rolled out dough to help the sugar/cinnamon stick. Tasty rolls, but I might omit the orange next time.

Amazingly Delicious Whole-Grain Brownies

These really are amazingly delicious. They have a very soft, velvety texture and are more like chocolate cheesecake than a chewy brownie. I didn't have any coffee extract so I just used 1/2 t coffee granules instead, and subbed oil for butter. Mine were done at 20 minutes, so watch yours carefully because these are fantastic brownies.

Spicy Apple Cake

This was really dense and moist and so tasty. I used 3 big apples in the cake and used fresh grated nutmeg and it tasted really spicy. For the icing I just used a nutmeg/cinnamon/powdered sugar and milk mixture instead of the thicker frosting, and it tasted really good anyways.

Green Tea Mint Cookies

These smelled good while they were baking, but the flavor is just not there. They taste really floury, and they have a dry, crumbly texture that just doesn't do anything to help them. I wish these were better, I really liked the idea.

Fat Free Mini Prune Honey Muffins

Ick. I'd MUCH rather eat plain prunes. These were just spongey, high carb balls of dough that tasted kind of like prunes, but mostly like flour.

Chocolate Puffed Wheat Squares

I'm torn between liking these and not. I only had about 5 cups of puffed kamut that I wanted to get rid of, and was out of cocoa so I subbed 1 ounce of unsweetened chocolate for the cocoa and about halved the cereal. The squares taste a bit bland until you hit a chunk of chocolate syrup mixture that didn't get totally mixed in, and then they taste better. I think honey in place of the corn syrup would be wonderful. I could see myself making this again if I buy more puffed cereal that gets just half eaten before we're tired of it.

Oatmeal Whole Wheat Quick Bread

The bread gets props for great taste and ease of preparation, but I really really wish that it wasn't so crumbly. I added an egg to try to make this hold together better, and maybe it did, but it was still too crumbly for my tastes. I baked this in a bread pan and it was just done at about 30 minutes.

Molasses Peanut Butter Crinkles

These are SOOO good. Once they have cooled they're slightly crispy but chewy in the middle, and the flavor is devine. While they look prettier rolled in sugar I think they're just as good without it, although I've never been a fan of sugar rolled cookies to be honest.

Buttermilk Seed Bread

This bread was nice, soft and dense but it just didn't jump out at me as awesome. It was easy enough to work with, although it did take about a cup and a half less flour than the recipe said it'd need. It slices easily and makes good toast, but I'll probably stick to my other favorites.

Black Bean and Corn Quesadillas

These weren't bad. I halved the recipe and added cumin and chili powder to the bean mix to give it more flavor. I thought there was *something* missing, but I don't know what. Not bad though.

Chocolate Sauerkraut Cake II

The idea of sauerkraut in cake is revolting...but you HONESTLY cannot taste it in here. It being in the cake has about the same affect as putting applesauce in. I nearly tossed my cookies at the thought of me seeing a strand of kraut in my cake, so I put it in the food processor before adding it and I liked that a lot better. I frosted this with a coconut/pecan icing and everyone liked it. I would have given this cake a 5 because it was really moist and had a nice soft texture but it just wasn't very chocolately.

The Best Meatballs You'll Ever Have

I have eaten way too many squirrels stuck to cook in a crock pot all day, and not wanting to eat them again I took the time to debone a few of them, stick the meat in my food processor and make meatballs out of them. I halved this recipe and used squirrel meat instead of beef and baked them in the oven instead of pan frying them and they turned out very good. The flavor was excellent, and these were so easy to put together. Did the rest of my family eat these? Oh yeah.

Orange Cream Cookie Mix

It's been a while since I've had GOOD cookies, but these definitely qualified as such. I changed the recipe a little bit...used 2 eggs, 2 cups of flour, 1/4 t salt and white chocolate chips, and these came out SO GOOD. The flavor is great, and if you're a cookie dough fiend, the dough is fantastic. I used my small Pampered Chef cookie scoop and got 75 two bite cookies out of this recipe. They look great and they taste awesome.

Cornbread I

I made this to go with some vegan chili I made and it went nicely with it. As advertised, this wasn't a sweet or cakey cornbread, but it was rather chewy and grainy. I kind of liked it like that actually, as this was the first time I've had a non-sweetened cornbread before. Mine was done in 20 minutes, so watch yours carefully.

Orange Chocolate Muffins

I think these muffins would be better with some vanilla. Aside from the mild orange and chocolate tones, there just seems to be something missing. I might try subbing cocoa for the chocolate next time I make these, and adding some vanilla to give it a better taste.

Beth's Spicy Oatmeal Raisin Cookies

These tasted really good, but mine spread out in the oven and ended up pancakes. I think it may have been because there was some moisture that I added with the raisins that I boiled in a 1/2 c of water and 1/4 c of Brugal dark rum, so that would have been my own fault.

Banana-Date Muffins

These were ok. I found myself digging through them just to get to the dates, and the rest of the muffin was just there to hold the dates in place. I subbed applesauce for the margarine, only used 1 T of baking powder because 2 seemed like you'd be able to taste it, and used a mix of whole wheat flour and AP. Not awful, but I won't be making these again.

Asparagus and Mushroom Frittata

I really probably shouldn't rate this recipe because I changed pretty much everything but the mushrooms and asparagus, but this was amazing. I added 5 chopped slices of lunchmeat ham, about a tablespoon of onion soup mix plus about 1/4 c of diced onion and stuck this in the oven. Not everyone liked cheese on their eggs so I was just going to let everyone add their own cheese as they wanted, but I thought this was rich enough without it that it didn't even need any cheese. This was delicious and really filly. I will definitely be using this again.
