Basil and Sun-dried Tomato Bread

I followed the advice of pervious reviewers and used 2T gluten, 1T sugar, and 1t garlic powder and this bread actually came out pretty good. It turns a very pretty orange color from the tomatoes, and the bits of basil and quinoa give it a very unique and pretty look, too. I don't suggest leaving the quinoa out; it gives it a nice look and texture, and you can find it in the organic section of your market shelved with other grains. I made this by hand and made 16 dinner rolls that I baked on my pizza stone at 375 for 25 minutes. I brushed the tops of them with some egg white and they had a great brown crust on top when they were done. I'll be sure to make these again, maybe with the addition of some jalapenos or some red pepper.

Spinach and Sun-Dried Tomato Pasta

This was such a pretty and tasty dish, and it was really pretty simple to make although you do dirty a few dishes. I used WW spaghetti instead of the pasta and it worked out just fine. I used 1/2 t of red pepper flakes and I think I might even up that a little next time. I did add 1 large diced chicken breast to the pan with the pine nuts/pepper/oil, just to have a bit of meat in the dish. I served with the Basil and Sun Dried Tomato Bread recipe from this site, that I made into rolls. Everything was great, thanks for a beautiful and tasty dish.

Byron's Ginger Chocolate Chip Cookies

I can't see how the picture listed for these cookies actually goes with this recipe. My first sheet of cookies flattned like pancakes until I added about 1/4+ of flour. The rest of the cookies kept their shape well enough, but the flavor was nothing special. I halved this recipe to begin with, but I kind of wish that I'd made even less.

Gingerbread Coffee

This was really good but really rich! It's enough to knock you over...or at least fill you up so you don't want you next meal. I left out the whipped cream, and it was good enough without it.

Baklava

I added about 1.5t of cinnamon and cardamom, and a healthy dash of lemon juice to the honey syrup, but followed everything else according to directions. The results were delicious...everyone loves this super rich treat.

Cheddar Baked Chicken

In the words of my dad "This was good, but it's not like there's fireworks" This was just your everyday weeknight chicken. A little better than plain grilled because it was nice and crunchy (I used crunched up Chex) and had some good flavor, but nothing really special.

Cranberry Orange Cookies

I thought these would be too tart with all of the cranberries (it DID look like there was a ton) but they actually turned out OK. The cookie dough actually is quite 'melt in your mouth' and the lemon and cranberry flavors go very nicely together. I think the glaze helped this cookie along a bit, but it was a very pretty addition to my holiday rotation.

Caramel Peanut Fudge

I wouldn't really call this fudge. It's rather a candy, and a chewy one at that. I stuck the pan out in the snow between layers to get it to harden faster, and that sped up the process quite a bit. I didn't have any evaporated milk or heavy cream, so I subbed vanilla ice cream for each of those items. I only put butterscotch in the bottom layer, and I think that if I had put it in both, it really would have been too overpowering. I liked this one quite a bit.

White Chocolate Macadamia Nut Cookies III

These weren't bad, but they weren't the cookies I was hoping for. Mine came out crisp and I wanted them soft and chewy, and they spread a bit too much for me. I got a little over 60 cookies with this recipe.

Black Bean Hummus

I just made this the other night and whooo it really tastes like garlic! The flavor of the beans does come through after the garlic, but it's kind of a secondary flavor. Really, not bad. I like this on crackers more than I do veggies.

Chocolate Truffle Cookies

These are like little brownie bites. I accidentally doubled the amount of cocoa and flour in the recipe so I think the cookies would have spread out more than they did, but they got the same flakey top that a brownie gets after it bakes, and it had such a strong chocolate taste that it was almost really too much...like you needed a glass of milk to swallow. I loved them.

Caramel Date Pinwheels

I love dates and this cookie really showed them off well. The dough was kind of hard to work with-it was pretty sticky, but I ended up rolling it between two sheets of wax paper, filling it with the dates and then rolling it and putting it into the freezer to harden. It sliced a lot better that way what with how sticky the dates are, and the cookies came out very pretty. A nice chewy texture and good flavor.

Old Fashioned Prune Cake

This was pretty tasty. I halved the recipe and used a bit more prunes than it called for, but I like prunes and it didn't seem overwhelmingly 'pruney'. It actually tasted a lot like there were DATES in the cake, not prunes. Very sweet with a bit of the glaze over it...it was a nice little cake.

Meh, these were OK. Maybe it was the type of cake mix/frosting I used (red velvet/cream cheese frosting), but I really didn't think these were anything to get excited over. Cute, yes, but I won't be making them again.

Sweet Potato Rolls

These are amazing! I made these yesterday (the day before Thanksgiving) and they still tasted wonderful and weren't dried out for today. I used one whole egg and 2 yolks to give them a nice yellow color in addition to the sweet potato and they were beautiful. My only complaint was that the dough was VERY sticky to work with. I ended up using about 6 cups of flour to the whole recipe, and the dough was still incredibly difficult to work with and shape into rolls. I ended up just dropping lumps of dough into the pan and baking them. They still came out great, and I got 3 dozen dinner sized rolls from the recipe.

Chocolate Banana Bread Pudding

I scaled this down to just two servings as it was just for me and my grandpa and it came out pretty good. My grandpa is pre-diabetic so I subbed 3 Sweet-n-Low packets for the 1/4c sugar, and used just 2 tablespoons of mini chocolate chips instead of the 1/4c of chocolate chips. By using mini chips they spread out all over the batter and you really couldn't tell that there wasn't enough chocolate. I used 2 egg whites instead of one whole egg, and added some cinnamon to the liquid. Yum! We both enjoyed the flavor of this. I planned on putting this in the fridge to let it chill after I pulled it out of the oven, but it smelled too good and got eaten right away!

Baked Honey Mustard Chicken

Mmmm this was SO GOOD. I halved the recipe and the chicken came out so juicy and flavorful. Oh man, these were great. I sliced up the chicken and put them over top of a baby romaine salad and drizzled the leftover sauce over the lettuce in place of dressing. Awesome, and SO easy.

Cookie Balls

I used Dulce de Leche Oreos in this recipe and these came out SO rich. I halved the recipe and actually had to use more cookies than I should have, as the dough was really gummy and gooey, but they tasted decent. I don't think I'll be making these again...just a little too rich for my tastes.

Cracked Sugar Cookies I

These are THE perfect sugar cookie. They beat out any other rolled or drop sugar cookie out there. Not only do they LOOK perfect but they taste it, too. Buttery, chewy and just a hint of vanilla. I made half of these plain and mixed in about 1/4 or 1/3 cup of crushed candy canes to half of the dough and made them into pretty peppermint cookies. They were delicious both ways, and they look awesome. I thought I'd found good sugar cookie recipes in the past, but this one is the real keeper.

Brazilian Coffee Cookies

I accidentally read the recipe wrong and put in only 2 teaspoons of coffee--Ooops! The coffee flavor wasn't as strong as I would have liked, although you could still taste it, but I think I'd like them more if the texture was different. They were somewhere between a shortbread cookie and a sugar cookie with a nice light coffee flavor (if you only use 2 teaspoons of coffee).
