Farmer's Casserole

Oh gosh, this is really yummy! As other's suggested I used frozen O'Brien hash brown potatoes; otherwise I followed the recipe as written. Hubby and & I really liked it...I WILL make this again! Thanks Lorrie for sharing this.

Easy Corn Pudding

I have made this particular recipe for years, it's always a huge hit and there's never left-overs - the only changes I've made are: I drain any liquid from the whole kernel corn and just before it's done top the casserole with 1 to 1 1/2 cups shredded 2% cheddar cheese (my family is cheese-crazy). I have never added eggs, I use unsalted "veggies" when I can, unsalted butter and low-fat sour cream. This is so yummy!

Golden Sweet Cornbread

This is DELICIOUS cornbread! My hubby is a born & raised southern boy and he loves his sweet cornbread (as I do, too!). He just told me to never buy the box mix anymore (which was his favorite forever!). As so many other reviews suggested: I let the corn meal and milk soak while I prepared everything else. Note: my hubby is a diabetic and also must restrict sodium soooo I used 1/2 t. salt, 2 t. low sodium baking powder, a splash more oil and substituted Splenda's "white" sugar blend for baking. Winner, winner!!!

J.P.'s Big Daddy Biscuits

OH YUM! Thank you so much for sharing this recipe. My husband is on a restricted sodium diet and I’ve been searching FOR MONTHS for a good, low sodium biscuit! This is it! Here’s what I did: to the 2 C. flour and 1 T. sugar I used 2 t. low sodium baking powder (I’m going to purchase no sodium baking powder next!), ½ t. no sodium baking soda, ¼ t. salt, 4 T. buttermilk powder, substituted water for the milk and used cold, unsalted butter instead of shortening. I figured that with the yield of 6 biscuits, each one has approximately 261 mg. of sodium. I didn’t really knead the dough either – just sort of patted it together on a floured counter, using flour as needed so the dough wouldn’t stick. Don’t know why I didn’t think of this before…take a good basic biscuit recipe and simply reduce the salt, etc.! Simply GOOD!!!

Cinnamon Raisin Bread II

Just made a loaf of this yummy bread! As others suggested, I used 2 t. cinnamon; substituted 4 T. white sugar for the honey, used unsalted butter, 3/4 t. salt (trying to cut back on sodium!), the egg was a large and soaked the raisins for 10 minutes. I needed no extra flour. I've been "proofing" my bread machine yeast for 10 minutes with the liquid and sugar - my new bread machine seems to turn out better results this way. This bread is soft, lightly sweet, with a nice hint of cinnamon and simply DELISH!
