Chicken Enchiladas I

I used 2lbs of ground chicken instead and it was TERRIFIC!!!!!!!!! Also next time I will skip the water because I had to let it simmer a looong time before it was thick enough to put on the tortilla and roll. Otherwise it was one of the best things I have ever made and will do it agian! Huge hit with the family and there were no left overs!

Italian Sausage, Peppers, and Onions

Quick, easy and delicious! I add a can of tomato paste cause my italian man like a da sauce. It really is a nice addition and not as thick as you think tomato paste would make it.

Awesome Roast Beef

Pretty good. To reduce the saltiness I read about in the reviews I didnt use condensed beef broth, just good ol' regular beef broth, also I added a package of onion soup mix. Was more like a pot roast than roast beef, but that was ok, we liked it. Made a kickin' gravy out of the drippins. Everyone seemed to enjoy. Next time I'd season the meat with a bit of pepper. Was very tender and fell apart on the fork which was nice.

Feta Cheese and Bacon Stuffed Breasts

Absolutely delicious!!!!!! Thought 1tbsp of Oregano would be a lot so I did it 1/2 at a time and all I needed was 1/2 but that is a personal preference. So tasty and EASY!!

What a hit!!!!!! Everyone LOVED this dip. Easy to make and sure to please. Didn't have chili powder or cumin so used taco spice instead, was great!

Gravy Baked Pork Chops

Very tender and flavorful. The sauce was runny, but after it was done baking I removed the chops from the pan and simmered sauce over flame and added a bit of flour to thicken. This made a fabulous gravy!

Easy Chicken in Wine Sauce

Easy and very tasty. Made the house smell great! I sauteed spinach in garlic and olive oil and served it over that. Makes it a much more visually appealing meal and look darn elegant!

Pot Roast in Foil

Pasta with Kielbasa and Sauerkraut

had no idea what to cook one night, looked in the fridge and all i saw was kielbasa and sauerkraut, wanted to make it a little different, so i did a search and found this recipe. I'm on the south beach so I skipped the pasta, but was a HUGE hit anyway! The Dijon mustard is a tasty touch! Highly reccomend.

Chicken Pesto a la Lisa

I am on the south beach, so i skipped the pasta and the corn startch, used "south beach approved feta", and this was still DEEE-LISH!!!! Really great! Found that chopping up the chicken into chunks after its cooked, simmering in the sauce for a bit when its almost done and serving it "ala Cacciatore" style makes it yummy and easier to eat!

Slow Cooker Chicken Cordon Bleu

AFter 6 1/2 hours in the crock pot on low Chicken still appeared somewhat pink. So we popped it in the microwave for 5 minutes,still pink. Next we put it in the oven for 1/2 hour, finally it seemed ok to eat. It was tasty but did not taste a thing like Chicken Cordon Bleu. The sauce had mixed with the cheese and the stuffing and was not bad but it was not what we had expected. I'd try this recipe again, but next time I'd bake it and do the stuffing on the side.
