Great meatloaf recipe! I cooked on a rack, in a foil lined roaster pan. Topped with 4 half slices of bacon ... Plenty of crisp edges! Took about 1.5 hours to get to 160 degrees done. I have a temp guage in my oven and it seems to run a bit cooler than the dial ...

Bacon Wrapped Bratwurst

These are great! Made them for the Super Bowl. I made a pkg of 5, so 15 pieces total. I cooked for 25 minutes, but needed to cook longer to get the bacon crispier. I will add more cayenne next time. THEY SET OFF MY SMOKE ALARM! so be warned, and use your exhaust fan!

Black Beans and Pork Chops

so easy! I used loin chops (leaner) and didn't have cilantro - no problem! My Salsa was too HOT so I added a pinch of brown sugar, cinnamon, tumeric, cumin. It smelled amazing. I served over basmati rice & green beans on the side.

Easy Spicy Mexican-American Chicken

So easy! I used bone-in, skinless thighs and Valentina hot sauce - followed recipe exactly. Quite spicy and very tender. I served with long grain brown rice + sauteed vegetables (carrots, onion, zuch, corn, chickpeas ...) Will make again and again. Great recipe with only 5 ingredients!

Tortilla Soup II

Great soup! I modify everything -- added can of hominy and chopped jalapenos. I don't fry my tortillas - I use corn tortillas and cut into strips, put on sheet pan then spray with olive oil and bake - 12 min or so at 350. shake pan 1/2 way thru. Great with sliced or chunked avocado added in!

Super Easy Salmon Cakes

Easy & Delish! I used the foil pouch of salmon (boneless, skinless) and have done both fried in oil and baked. Both versions come out perfect!

Sarge's EZ Pulled Pork BBQ

Delish! I used pork tenderloin. + 2 sliced garlic cloves, into slits in the roast. Seasoned with season salt & coarse black pepper. Will make again and again.

Cranberry Oatmeal Cookies

I'm no baker and these cookies rock! I changed a few things ... 1/2c whole wheat flour + 1/2c all purpose (1c total). only used 1 stick butter (8T). + 1T white sugar. + bit of cinnamon, nutmeg, orange zest. used Pecans instead of Walnuts. Baked for 12 minutes (rotate 1/2 way) and they were chewy and delish!

Indian Chickpeas

Loved it! I always make a few changes to recipes: increased the amount of masalas a bit to my taste, used red onion, 2 roma tomatoes (squeezed of seeds). I added a dash of half n half at the end, after the simmer. Will accompany my curry dishes from now on! Very healthy side option.

Chicken Chili Soup

I almost submitted my own recipe and saw this one so similar! Mine: Poached Chicken Breasts, Yellow onion, 3 jalapenos(seeded), yellow hominy, 1 red bell, 1 small can spicy V8 instead of tomatoes, kidney beans. 2 cans chkn broth (one used in poaching). Served with blue corn tortilla chips and hunk of cheddar cheese. Great spicy soup!

Breakfast Pizza II

This didn't work out for me. (but I didn't follow the recipe exactly). I used fresh mushrooms instead of jarred, and topped the pizza with another crescent roll. and 6 eggs wasn't enough - I upped it to 10. It was a watery mess. I'm guessing it was the fresh mushrooms, or having a top made a difference. I did increase the bake time ... i will try again. I hope to see successful reviews from others!

Rotisserie Chicken Chili With Hominy & Chiles

Loved it! I improvised a little ... Williams' pre-pkgd chili spice mix, black beans, hominy and didn't add the add'l corn. i used a can of diced tomatoes also. Its a great alternative to standard beef chili.

Tuna And Bean Salad

Pretty good. I omitted the green beans. It was much better the next day as the tuna was not so "strong" and the flavors were blended. I used albacore tuna and served on baby spinich as a salad. Will make again when craving a different tuna salad. May try with kidney beans next.
