Angela's Awesome Enchiladas
I'll give this a 2 star because I liked the filling. The rest was just tortilla goo. 5 tortillas? More like 2 pans of 9x13. Fortunately, there was a lot of filling left over for another try. I don't have any soup mixture left so I will roll the filling and bake without the enchilada sauce for 20 minutes and then add the enchilada sauce and cheese and bake for another 5 or so. I'll let you know how that works out.

Bran Muffins II
I thought these were very good and I especially like that I can make them the night before and bake right away in the morning. I added some vanilla and swapped half the shortening with butter. Everyone agreed that they were a little "greasy". Normally, I use applesauce for the oil but didn't have any. Next batch will swap for sure. I actually liked the flavor better when they were cold. Lots of options for the next batches based on all of the other reviews.

Breakfast Muffins
These were just ok. I agree with earlier reviews that they were biscuit-like. I used fresh blueberries which made the insides too moist - almost gooey. Next time I will thaw frozen blueberries and rinse them. I will probably enjoy these as an afternoon snack but for breakfast I want something sweeter and more cake-like.
