My Canadian Friend's Bean Soup

A wonderful woman from chuch brought this to me when I had my baby. I just came online to find this recipe so I can make it myself. It is so delicious--great as a meal to bring someone as it reheats well and stores well.

Thai Curry Soup

Cornbread Casserole

This was good but I prefer a sweeter cornbread, so if you are looking for sweet--this isn't the recipe for you. Or, substitute a sweet cornbread mix. Still a nice dish!

Slow Cooker Chicken Taco Soup

This was really delicious, thank you for sharing. I made up 4 of these and froze in big ziplock bags, thawed one each week and then had a super quick meal that cooked while I was running errands! We topped ours with cheddar and chips but avocado slices would have been awesome. Even my 5 year old enjoyed it!

Amazing Chicken

My two year old said "Mo Chick Chick" and my five year old ate thirds. I spiced up the mayo with onion powder, garlic salt and parmesean. Really delicious, something that everyone in the family can enjoy. Thanks for the idea!

Potato Casserole IV

I get compliments on this every time. I use cream of onion in place of the cream of chicken and top with fried onions. You can add some lightly sauteed diced green peppers and cooked ground beef to this for a casserole dinner. I agree with preparing it ahead of time and letting it thaw in the refrigerator--that's the only way I do it. This also freezes well so you can double the recipe. I think this is a bit salty, so I am going to omit the salt next time.

Stuffed Peppers Italian Style

I really enjoyed this--the bread cooks up as a nice stuffing and the anchovies lend a great kick. My husband hates anchovies, he couldn't taste them in the first pepper he ate, but he could in his second helping. But hey, he had seconds, so he still thought it was pretty good!

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

Really delicious--if you like blue cheese. My husband calls this one a keeper. Instead of browning on the stove, I simply breaded these in breadcrumbs and crushed nuts and baked them. You can prepare several servings at once, freeze before baking, thaw and then bake at a later date. So I triple this recipe--not much more work, but we get three separate dinners out of it!

Eastern Rice Salad

One of the best and unusual salads I have tried, a great change of pace! I do use sesame oil rather than vegetable oil, some celery seed and added plenty of raisins--this adds the sweetness and complexity that it needs. Let the dressing sit on the salad for about an hour before serving--it will make the mushrooms and rice much tastier.

Peking Pork Chops

These are good. We made brown rice with chicken broth in place of the water, and sauteed pineapple chunks, chopped green pepper, and minced red onion and then mixed that in with the rice. Sounds weird but the chops on top of it were "restaurant quality" according to my husband!
