Bottom Round Roast with Onion Gravy
The recipe deserves 5 stars as written, for flavor, moistness, and ease. For personal preference, we made a few adjustments. We browned the meat first. We used 2 humongous white onions and 4 cloves of garlic and added a cup of beef broth. We chose to use red wine vinegar. After we got everything simmering in a Dutch oven, we covered and put it in a preheated 300 degree oven for 4 hours. We used beef broth in place of water to make the gravy. It was delicious and even more so the next day.

Fluffy Pancakes
I enjoy this site because I can learn from other reviewers! I made these using 1 cup of buttermilk, as it is a common ingredient in my refrigerator. I also added 1/2 teaspoon of vanilla. I let the batter sit about 30 minutes and did not mix again. It is an absolute must to be patient and cook these over medium heat or they won't be done inside. We got 7 pancakes, which was perfect for us. They were fluffy and delicious!!

Chantal's New York Cheesecake
I made this for my sister's birthday. I have never made a cheesecake before. My springform pan is 10", not 9", which was a good thing as it wouldn't have fit in the 9". I used 15 whole graham crackers, which I don't think was intended as there wasn't nearly enough butter...I just added added more and went with it. Due to a physical disability, I used a mixer for all the mixing, instead of a wooden spoon. I followed all the directions, but my cheesecake did split. I'm not sure if this was because I used the mixer or if I didn't grease the pan enough. No matter, it was delicious!! I will definitely make again and try greasing the pan more liberally and work on mixing enough but not too much. A crack would not be a deal breaker...there would be plenty of ways to disguise it. I would be totally happy if I were served this in a fine dining restaurant.
