Chewy Coconut Cookies

Reviewed: Feb. 5, 2014
I used half coconut oil for the butter. These were amazing. My four year old his behind the dishwasher to steal them off the plate as I was putting them on.

Delicious! The only thing I will change for next time is to make one loaf instead of two out of this recipe.

These were okay, but they didn't fool us into thinking we were eating crab!

Morning Glory Muffins I

Reviewed: Jul. 28, 2013
I used two whole eggs instead of the egg and egg whites. What a hit! The 4yo wanted to eat the batter without baking it.

Harvey Ham Sandwiches

Reviewed: Mar. 14, 2013
I don't feel I can give this 5 because I didn't cook and shred a ham! I did however make the sauce (reduced for 4 servings) in a skillet with Dijon mustard and I stirred in some sliced deli ham for quick hot sandwich dinner. Put the mix on some raisin bread and my contrary 2 and 4 year-olds changed their tune from "I'm NOT hungry." to "This is delicious!" I will definitely be revisiting this in all it's glory for a large gathering.

Country Apple Dumplings

Reviewed: Mar. 14, 2013
Made this yesterday for an impromptu playdate. I halved it in an 8x8 pan and used Sprite instead of Mountain Dew, and followed the rest of the directions to the letter. I stirred the sugar into the butter until it was mostly dissolved. They were beautiful, and tasty. In fact, they got better the longer they sat. The only thing that stops me from a 5-star rating is that the crescent rolls really do have that distinctive taste. And I think I would enjoy them more with my own pastry dough. Still, it would be very handy to have these on a camping trip. Few ingredients and kid friendly. :)

Apple Squares

Reviewed: Sep. 27, 2012
Like some other reviewers I doubled the recipe but left the cinnamon sprinkle topping the same. i also added extra apples and reduced the sugar a bit. Like everything else in food, it's all a matter of personal tastes! Very nice, moist, snacking cake. Next time I'll add even more apples! Deelish!

Fresh Strawberry Upside Down Cake

Reviewed: Jun. 8, 2010
This was a good recipe. I used a French Vanilla cake mix, and added the zest of two limes for flavour (to make it like a Strawberry Daiquiri cake). The marshmallows completely disappeared on me though, no crunch or anything.

Aunt Norma's Rhubarb Muffins

Reviewed: Jun. 8, 2010
These muffins were really nice, light and fluffy with a good crumb texture. I substituted stewed rhubarb for the oil and they remained lovely and moist.

Sweet Dinner Rolls

Reviewed: Oct. 4, 2009
This recipe is very versatile and extemely forgiving! I have made it several times now, adding different things such as herbs and/or cheese, rolled it into a variety of shapes and even had my bread machine lose a paddle and forget the cycle while making it, so it had to be removed and finished being kneaded by hand. It tastes just as good with whole wheat as it does with white flour. My mother, who trained as a chef, and always finds something wrong with anything I make, had nothing to say beyond: "Mmmmmm." And then she ate three. Thank you so much for such a great recipe! I don't buy rolls anymore, since it only takes a trice to make these :)

Cajun Crabmeat Au Gratin

Reviewed: Jul. 14, 2008
I love this recipe and so does my family! The only thing I changed was adding more crabmeat! My husband doesn't really like "fish" but he's asked for thirds every time I've made it. I use the imitation crab meat, I think it has a sweeter flavour.

Dianne's Crab

Reviewed: Jul. 14, 2008
This recipe is really good. I did alter it a little bit after I made it the first time to suit my own tastes, but I have to admit. It's fantastic. I used it as a topping on homemade pizza, on top of a quickly whisked up alfredo-type sauce as a base with a variety of soft cheeses on top. It was gobble down really quickly, and only request was to add scallops next time! Thanks for the great recipe, so quick and easy too!!
