Fresh Salsa I

Very good salsa, but I added cilantro, fresh lime juice, fresh tomotoes, and some pepper. That is what most before me had said. Mine was VERY spicy though, both times I made it, but was good for us! Thanks!

Southern Sweet Potato Bread with Pecans

This is the BEST homemade bread I've ever made/had! I made it just like the recipe said, except that I used walnuts instead of pecans and I made them muffin size, instead of in a loaf. Baked for approx. 35 minutes (since they were smaller than a loaf). AWESOME RECIPE!!!!

Charleston Breakfast Casserole

This was a pretty good breakfast casserole, but I have tasted better. I think maybe using sausage instead of bacon would have been better maybe. I don't know really.... just wasn't really that impressed. Sorry!

Ranch Crispy Chicken

Really good and flavorful! I think it might get even crispier if you sprayed it with Pam half-way through. Don't know... will try next time!

Banana Pancakes I

Very good! Taste almost like banana bread. Only used 1 1/2 bananas and next time I want to add chopped pecans (didn't have them on hand this time).

Easy Chicken Tetrazzini

This was a success! The only changes I made was to sautee up some mushrooms, onion, and garlic. I put that on top of the chicken, before pouring the sauce over it. It might could use some herbs added or maybe I should have just used extra sharp cheddar cheese. I used a milder Swedish cheese, so maybe I just needed a stronger cheese. Anyways, it was good!

Pineapple Casserole

This casserole was AWESOME! The only change I made, was by using Ritz crackers instead of Saltines (I think it gave it even more of a buttery and salty taste). Could definately be used as a side to pork (or whatever) OR as a dessert. Think I'm going to try it out as a dessert and serve it over vanilla ice cream!

Scottish Oat Scones

Pretty good, but definately needed to add more sugar! They had a very "healthy" taste to them and were good served warm with maybe melted butter and sprinkled with sugar. Just needed a little more "sweet flavoring". I guess I just should have doubled the sugar. But good!

Stuffed Peppers My Way

Stuffed peppers were a success! I replaced the feta with blue cheese and also added some cooked bacon chopped up. But after 25 minutes in the oven, the peppers were DEFINATELY done.... so probably better to say cook for 20-25 minutes only.

Basic Microwave Risotto

I thought this recipe was awesome! The only thing I added was some sauteed mushrooms and an extra clove of garlic. It was super easy to make and exceeded my expectations!
