Orange and Lentil Soup

I liked it a lot. The flavor was great. I'm knocking it down a star because my daughter didn't like the flavor at all, and she's not a picky eater, and she loves lentils.

Chicken Pot Pie IX

Not good. Bland, chalky... and I did what other recommended and added more salt, garlic powder, onion powder... seriously still bland. The flour in the mixture was gritty, and it just tasted like flour. I tasted it while it was thickening and noticed this, so I added 1/4 cup more milk and 1/4 cup more broth, and it still tasted like flour. I love pot pies, but I do not recommend this recipe.

Coconut Lentil Soup

It was good enough to eat, but I can't say it's my favorite dish. I made a few modifications to bring it up to 4 stars. If I hadn't made these changes it would be extremely bland. I used coconut milk instead of soy milk, I used unsweetened coconut shreds (it doesn't specify, but this is what I had in the house), I added a tsp of cinnamon, a lot of Kosher salt (REALLY needed salt), a tsp of garlic powder and a tsp more of curry powder. Maybe it will taste better tomorrow as another reviewer suggested?

Refried Beans Without the Refry

Exceptionally tasty! My one year old loved them, too. I modified the recipe using suggestions from 100daysofrealfood.com. I changed the beans to 2 cups (which is one bag and much easier than having half a bag open), 6 cups of water, slightly more cumin than suggested (hearty pinch), 2 garlic cloves instead of the 2 tbsp, and I left out the jalapeno because I was feeding this to a baby. I did need to add a little more salt for my liking. It is fantastic with a little shredded cheese on top and slices of avocado. Yum!

Good 100% Whole Wheat Bread

This was excellent once I made a few modifications. I replaced 1/4 cup flour with vital wheat gluten, as others suggested. I also used organic butter instead of margarine. I will definitely make this again with the changes I made. I also want to try to substitute the dry milk power for whole milk and honey instead of white sugar.

Risotto with Butternut Squash and White Beans

Very good risotto. I will definitely make it again. I made a few modifications. I added in 1/2 tsp instead of a full tsp. That was plenty. I think the full amount would have been overwhelming to me. I also didn't add the fresh parsley because I didn't have any on hand, so I just used a tbsp of dry and that worked fine (for adding color). My family doesn't like Parmesan, so I left that out. It was good without it, but I think it was better when I added some on top of my portion!

Spinach Quiche with Kid Appeal

It's hard for me to really review this because I made a lot of the recommendations that others suggested, and I'm not sure that was the best idea in the long run. I used 7 eggs instead of 8, did 1/2 tsp of thyme and made this crustless in a lasagna pan instead of using a round pie pan. I'm glad that I only used 1/2 tsp of thyme. Even that may have been too much! I wish that I had used that 8th egg though. It was dry and too thick with the spinach. Overall, it was ok. My 1 year old daughter LOVED it. I've never seen her eat so much food. I didn't really care for it at all. So my husband and daughter get all of the leftovers :). If you do Weight Watchers, if you make it crustless it is 5 pointsplus a serving. Not bad.

Savory Herb Rice

Very good! I didnt have onion powder, so I doubled the dry onion, and it tasted great. The only change I would make next time is to half the soy sauce and just add some kosher salt. It was borderline "Asian-y".

Fluffy Pancakes

These were excellent! I was a little cautious about making a recipe that 1. doesn't use buttermilk, and 2.using vinegar (which seems like an odd pancake ingredient to me). It turns out that they were fantastic - fluffy, soft, tasty and not too sweet! They are definitely my go to pancake recipe from now on. I made them with delicious blueberries, so I'm sure that had a little bit to do with it. Next time I am going to try them with half whole wheat flour. I think the recipe could handle that without making them too dense.

Enchilada Sauce

It was ok... Not as good as what you can get in pretty much any standard Mexican restaurant. It was good enough to use, but I'm not sure I would go out of my way to make it again. The recipe makes tons of sauce. I recommend making half the recipe unless you want to keep a batch fot the freezer.

MMMMM... Brownies

Great recipe and easy to make! I love that everything can be made in one pan. The brownies are definitely rich and fudgy. One small piece goes a long way. I agree with some other reviewers that the recipe is a little salty. I followed the recipe, but when I make them again I will probably use half the salt. I made them for my husband's birthday, and the were a big hit.

Peanut Butter Cookies IV

These are fantastic. I like them much better than other similar recipes on this site. I added a little more peanut butter (maybe 1/8th cup more, but I didn't measure), and I chilled the dough in the fridge before baking.

Pie Crust IV

Very good - not fantastic. I used butter flavored shortening, and that really helped with the flavor. I also sprinkled white sugar onto the top crust before putting into the oven. I found this dough to be VERY sticky. There was absolutely no way I could do anything other than make a normal top crust (like good luck if you want to do a lattice). I did put the dough in the fridge over night, too, so it's not that it wasn't cold. Maybe more flour would have helped? The crust was tasty, but it definitely wasn't flaky. I was find with that, but if you want flaky then don't use this recipe.

Peach Pie the Old Fashioned Two Crust Way

This was excellent! I did make a few changes - per other people's suggestions - so this rating is for the pie with those modifications. I made my own crust, but I think you will be alright with the store bought kind. MODIFICATIONS: 1. Used half the amount of flour and substituted with corn starch, 2. Used 1/2 cup white sugar and 1/2 cup light brown sugar, 3. Omitted the spices (my husband does not like them), 4. I used some egg wash on the bottom of my pie crust before filling it so prevent it from getting mushy, and it worked like a charm!

Tangy Vegan Crockpot Corn Chowder

Umm... not terrible. Not great. I'm not sure what this was, but it wasn't corn chowder. The flavor is very intense. I'm not sure if it is a soup. I almost wanted to put it over rice as if it were an Indian dish (although it didn't taste like Indian food). My husband said he liked this, but he didn't eat the leftovers. Need I say more?

Fluffy Whole Wheat Biscuits

These are pretty good. I definitely don't think they are as good as real buttermilk biscuits, but they are a good whole wheat alternative. I made them into drop biscuits because they were way too sticky to work with any other way. I suggest making some honey butter to go along with them.

Autumn Harvest Cookies

I'd give these 5 stars for flavor and 4 stars for texture. I agree with other reviewers that they are slightly dry - not in a bad way at all, I just prefer cookies like this to be a bit chewier and 'melt in your mouth'. To compensate I undercooked them, but maybe next time I'll take others' advice and use baking soda. They are really delicious, and I will definitely make them again!

Peach-a-Berry Pie

This was ok. I'd probably give it 3 stars if I didn't hear from others that it was good. I followed the recipe with the addition of a tbsp of corn starch to combat some of the liquid. It needed something to me, and it was still really runny, even after sitting for an entire night. Next time I'll do 1/2 brown sugar, reduce the raspberries because they dominated the flavor, and add in a few more peaches. Also, I picked my own peaches, but they weren't super sweet. Next time I'll user really ripe peaches or canned.

Ma Ma's Sugar Cookies

Eh, just ok. I found it pretty much impossible to roll this dough out. I tried adding more flour, I tried chilling it in the fridge first... nothing worked. Just sticky and unforgiving. The cookies were a little bland. I liked the texture, but they were missing something.
