Maple Apple Crisp

Hot Vanilla

i've been making this since i was a kid only without the cinnamon. it's very good! i do like it with cinnamon too, but the other reviewer is right, it only floats on top so i mostly skip it.

Grilled Peanut Butter Apple Sandwiches

absolutely delicious! i used a granny smith apple because that's all i had and put peanut butter on both sides of the bread. at first i didn't know what to expect with this recipe, but the apples soften up slightly and make this a delicious comfort food sandwich. i ate the rest of the apple dipped in splenda and brown sugar which was also really good!

Gingerbread I

This bread is absolutely amazing!! I doubled the spices like the rest of the reviewers and made some substitutions to make it lower fat. I used 1/4 cup butter and 1/4 cup plain fat free yogurt (with a spoonful of splenda to sweeten it) and sub'd half the sugar with splenda. My gingerbread wasn't dry at all, but i only baked it for 30 minutes and it was perfect.

Kickin' Collard Greens

Bacon-Wrapped Chicken

yummy. instead of green chilies i used green onions as i was making this for my grandparents and couldn't risk any spiciness. it was delicious. although next time i would cut the cooking time down a bit. maybe five minutes to start. chicken got a little dry once uncovered. (i covered for 30 mins and uncovered for 15).

Sauteed Swiss Chard with Parmesan Cheese

This is the best way I have ever had swiss chard. It was delicious. Since I am always trying to cut out fat, I think next time I will only use one tablespoon of butter next time.

Persimmon Pudding

I have never made anything with persimmons before, but was anxious to try. This was AMAZING. I listened to the reviews and left out a cup of sugar, plus i substituted 1/2 cup of sugar for 1/2 cup of splenda. You could not tell the difference. I also had less than half a can of pumpkin leftover so I threw that into the mix. This was SO good. In fact, as I was attempting to stir every so often throughout cooking my roommate and I ended up using that to take huge bites while it cooked. Seriously SO good. I love the texture of this pudding. Rich, dense, and slighly gooey. YUM!

this was alright... too much vinegar for my taste. i think maybe i'd rate it higher if it called for half the amount of vinegar. i typically like strong flavors, but for some reason this didn't do it for me.

Apple Dumplings I

holy ! this is by far the best non-chocolate dessert i've ever had. it's definitely the best dessert i've ever made. i followed the other suggestions and i also made my own pastry crust. the sauce turned into pure carmel. i cooked it on the stove separate and added it the last 10 minutes of baking. like the other reviewers i diced the apples, cooked the sauce separate with brown & white sugar and reduced the water. to die for!

Cowboy Mashed Potatoes

VERY good. the only difference i made was i cut fresh corn off the cobb and added leeks. this was amazing. oh and a side note, my carrots didn't completely mush into the potato mixture. i'm not sure if it was supposed to... maybe they should have cooked a little longer? either way, i have no complaints about this recipe.

Sweet and Spicy Green Beans

i LOVED this recipe. what made it so great is the sauce. great flavor. i followed the recipe exactly and the only change i might make is to skip steaming the green beans because the sauce is so good, i think the beans would absorb even more of the flavor if they were cooked in it the entire time.

Roasted Beets and Sauteed Beet Greens

This was a pretty good recipe. I felt like the greens were lacking something so I added crushed red peppers and 1/2 tablespoon of red wine vinegar. I love beets, so overall I was happy with the dish.

Banana Honey Yogurt Ice

this sounded so good. i wanted to love this recipe. first i must say that i have never made ice cream or frozen yogurt of any kind before. that said, this recipe as is was waaaay too sour. i had to add quite a bit more honey and then it was still sour but had a very strong banana taste. i happened to have a little bit of ricotta cheese in the fridge and some almonds so i blended them in. at that point (and a few splenda packets) the flavor was better, but when this froze it turned into a solid block. since i've never made this before i'll give it 3 stars to be fair. but really, i would never make this recipe again.

Grilled Peanut Chicken

i'm giving this five stars because it was a base recipe for one of the best meals i've cooked in a while. i followed tips of other reviewers and used a Forman grill as well as double the sauce and serve it over whole wheat pasta. it was SOOOO good. i added some ginger powder, crushed red peppers, and an extra clove of garlic as well as some water and extra soy sauce to thin the sauce. MMMMMM!
