Simple White Cake

"That cake is killer," is what hubs said, after eating about one fourth of it as blueberry shortcake. I made it exactly as prescribed in the recipe, with the one addition of 1/2 tsp. of salt. I also used salted butter. It is magnificent, really! Try it!

Extra Easy Pumpkin Cookies

Whether you like these or not will probably depend on what you're looking for. I used a stick of butter rather than the applesauce to end up with something less cake like. I still ended up with little "cakeys." If I use this recipe again, I will probably make as muffins. I used a carrot cake mix, and didn't add the other spices, because I was making them for children. Flavor is good! They could use a little punching up with some chocolate or white chocolate chips. Not bad, but not 5 stars either. Make them as muffins with a cream cheese frosting:)

Sweet Potato Mini Loaves

Excellent. I make it in my regular loaf pans. My oven runs hot, so I am not going to give a baking time. I also make it with any combination of sweet potatoes and pumpkin. Love it!

If you use regular, rather than quick-cooking oats, you will not get the proper consistency for the cookies to be dry and not runny.

Butter Cake

Outstanding! I changed nothing. However, depending on your oven, it can take less than 50 minutes to bake. I would start checking at 35 or so, with my old oven that runs hot. I baked it in an oval casserole that is slightly larger than a 9-in. round, which could account for the shorter baking time. Again, outstanding just like it is!!

Crunchy Peanut Butter Swirl Brownies

Very, very good. It was my goal to make these dairy-free for a colleague. I used 1/2 c. peanut butter in the swirl and left out the cream cheese. Only four stars because it could use more peanut butter, but it's excellent and versatile. Add chocolate or pb chips, or reese's pieces....or m and m's or......

Favorite Banana Blueberry Quick Bread

This is good and easy. I used oil instead of shortening and didn't use my electric mixer. I used 1 c. blueberries b/c they needed to be used. Added a bit of cinnamon and vanilla, and used half brown sugar. Mine took a about 65 or 70 minutes to bake through.

Adam's Apple Cake

I would say it's really 4.5 stars. I used half brown sugar and butter rather than oil. No electric mixer is necessary. I melted the butter, stirred in sugar, let it cool a minute then stirred in eggs and dry ingredients, followed by apples. It's a breeze to make with the pre-sliced apples from the produce section. An hour was way too long for mine to bake. Probably 40 min. at the max. Might benefit from a glaze or streusel.

To Die For Blueberry Muffins

I followed the recipe as written, except I used half brown and half white sugar in the topping. I would suggest buttermilk and a bit of good quality vanilla. I made 9 muffins filled to the top of a regular-sized muffin tin. The topping seemed to be too much. I would suggest cutting the butter in half as Chef Joy did, or just cutting the topping recipe by a third or half. I let my butter come to room temp, and perhaps if it had been cold it might have worked better.

Sunshine S'more Cupcakes

These were mediocre. I followed the recipe, except I used whole large marshmallows on top and melted them in the oven for a few seconds, to avoid the marshmallow creme mess. This was successful. I also used about 1 TBS. milk choc. chips per cupcake instead of kisses, because that's what I had on hand. I would recommend adding a tsp. vanilla to the cupcake batter. The one other thing that I think might have improved mine would have been to use the kisses, as that would have given a nice chunk of chocolate. The chocolate was the best thing about them. Just make regular smores....

Three Ingredient Peanut Butter Cookies

Easy and delicious - and from scratch, too! My daughter calls these "poor" cookies, because, as a poor college student she could still afford to make them. I have made them many, many times. Tonight I used brown sugar and added chocolate chips. Just great!

Maple Walnut Banana Bread

This is a good recipe. It's awesome for when you don't want to drag out the mixer. I used oil instead of margarine or butter, and water for the milk, because I have a colleague who can eat not dairy. I added cinnamon, but it could use some additional spices. I also added about 2/3 c. of peanut butter chips. Got good reviews at school. Don't overbeat:)

Wacky Cake VIII

I have made this several times, and this time, I decided to eliminate the cocoa. I used milk as the liquid, although I have used coffee when making the chocolate version. It's so versatile, cheap and easy. Especially the vanilla version would be great with fruit of any kind: for example, drained crushed pineapple, using pineapple juice for the liquid.

Guilt-Free Chocolate Cake

I made this with 1/2 cup egg beaters and 2 6 oz. yoplait light yogurts. (I used red velvet cake flavor and black forest cake flavor, because it was what I had.) We really liked the cake. I put some chocolate chips on top after I turned it out of the pan. They melted, hardened, and formed a nice variation in texture:) Definitely a good substitute when you have a chocolate jones!

Peanut Butter Cereal O's

Very easy take on the old marshmallow treat classic. I combined some honey nut and chocolate cheerios that were about to go stale, and they're fabulous. To better manage marshmallow mixture and clean up, spray your mixing bowl, measuring cup, and spoon or spatula with nonstick cooking spray before using.

Hasty Chocolate Pudding

For convenience, cost, and fat content (with skim milk) this is definitely a five star recipe. I've made it twice now. This time I made it as filling for a chocolate cream pie. I have made this several more times and just put a 1 to 1.5 tablespoons of salted butter in it along with the vanilla. Couldn't be better!

Easy Oatmeal Cookies

These should be marketed as a "healthy oatmeal cookie alternative." I had a hard time getting the dough to hold together. I added a little milk, and finally added some extra brown sugar (maybe 1/3 c.) and a little more olive oil to get them to stick together and function as a cookie dough. I think there's too much salt in them as well. Not bad.....just not great either

Easy Grilled Lemon Chicken

This is an excellent basic recipe. I didn't have the ginger, so I left it out. I added two tsp. of brown sugar, and, as someone else suggested, I added a dash or two of garlic powder. I also just cut the liquid ingredients in half, because I didn't need a full recipe. The marinade could be made with pineapple juice and then the brown sugar might not be needed. Would be excellent to brush on skewered vegetables.
