Whole Wheat Pancakes

This recipe is absolutely fantastic. I follow the recipe exactly as is and it turns out perfect every time, far more tasty than normal pancakes. Great with chocolate chips or bananas! (or both...)

Chicken Enchiladas I

Mmmm... this was absolutely awesome. Great both with chicken and with beef in its place. I put the water in as the recipe says, which makes the sauce very runny at first, but this turns into a really creamy sauce after baking, and the flavour really seeps into the tortillas. I also use chopped tomatoes instead of sauce, and I use the "Red Enchilada Sauce" recipe to pour overtop instead of taco sauce. Fantastic.

Eggplant Parmesan II

I found that the eggplant was completely lost in this recipe. Once you baked it, then smothered it, then baked it some more, all you really tasted was spaghetti sauce and cheese. I think I'll just stick to grilling my eggplant.

Mom's Chicken Cacciatore

This was delicious. Didn't have wine, so I used stock instead, I don't think it's a noticeable difference. This recipe makes good chicken, but the sauce - over a bed of whole wheat fusilli - was incredible. I will make more of the sauce next time.

Cottage Cheese Perogies

I really enjoyed the dough for this one, and the cottage cheese filling was really easy to make and quite tasty. That being said, the filling doesn't taste like what you would expect. What I'll do is use this recipe for a quicker, lighter meal, then use a more standard filling of 4 medium potatoes, boiled and mashed with 1/2 cup cheddar and 3 onions, already chopped and sauteed in butter, when I have the will to make it.

Hershey's ® Hot Fudge Pudding Cake

My grandma used to make a chocolate pudding cake, and it was always one of the favourites for me and my brothers growing up. This one is exactly the same - a huge hit when I made it for some friends.
