Shrimp Scampi Bake

Really good, but tweaked to make it more "scampi-like". I added italian breadcrumbs and parmesan to the top and added some white wine to the sauce and served over linguine...YUM!

Artichoke Spinach Dip

I liked the dip, but cut back on the sour cream and ended up using 3 packages of frozen spinach! I also added some lemon juice and fresh pepper and sauteed some garlic in the butter instead of using the garlic salt. It made enough for me to freeze two medium sized portions for future gatherings, so I did like that aspect.

Cincinnati Skyline Chili

I'm in agreement with other reviewers--way too thick, nothing like the real Skyline Chili. The flavor was good, but still not like the original. I'll keep looking for their dry mix--they had it in grocery stores at one time...

Lime Chicken Soft Tacos

I made these after work the other night and the only changes I made were to shred the chicken after it had cooked, and I omitted the green onions. I thought they were decent, but not as good as everyone has raved about. I don't think I would make them again.

Chicken Florentine Casserole

I've made this twice now and it was great both times! I like to serve it with egg noodles or garlic butter spaghetti. My only alteration is using 2 packages of frozen spinach in place of canned.

Annie's Fruit Salsa and Cinnamon Chips

This was served last summer at a graduation party I attended and everyone Loved it! I asked for the recipe several times, but never received it and found it here! I made it last week for a girls get-together and brought it out as a dessert item. It got lots of oohs and aahs and everyone again raved over it. I only made one addition--a splash of 7Up soda for a lemon-lime zing. I also used MacIntosh apples instead of Golden Delicious because the GD haven't been any good lately... great find!

Creamy Chicken and Wild Rice Soup

I made this recipe exactly as it called for, but the roux seemed very thick when I added the cream already. I let it cook a while, but it formed a really thick paste. I thought the recipe was going to be a bust, but I continued and once the roux and broth cooked together for 10 minutes or so, it did thicken and the soup was nice and creamy. After eating about a half a serving though, the intense flavor did get a bit overwhelming with every bite. I did freeze half of it to have at a later date, but I don't know if I would make it again...
