Chocolate Chocolate Chip Cookies I

Love, love, love! Easy to make. I didn't use walnuts, didn't chill the dough, and they turned out amazing. I like that they don't flatten like most my chocolate chip cookie recipes do.

Clone of a Cinnabon

Oh my! I thought that the first time I made these it was a fluke, as I'd never made any baked product so delicious. My second time, they were just as amazing. Family and friends are in love. We are all going to need a weight loss program.

Best Marinara Sauce Yet

I've made this three times and have stopped buying store marinara. I double the recipe, use whatever tomatoes I have on hand and add extra garlic and two teaspoons or so of brown sugar. Also I use my immersion blender rather than hauling out the food processor. Simmer time for me is about an hour. This freezes great. I put two cups into a freezer ziploc then stack them, so I always can have this yummy sauce on hand.

Chef John's Sausage & Shrimp Jambalaya

I added a chicken breast that I browned along with the sausage. Also added some garlic and used the canned tomato/green chiles that others mentioned. It made lots and can't wait for leftovers. Excellent!

Delicious Ham and Potato Soup

I doubled the recipe and made a huge pot of this with leftover Christmas ham. It was even better the second day. Excellent, excellent soup. We topped it with grated cheese and sour cream with chives.

Zucchini Casserole II

Easy and uses up zucchini. I used a cornbread stuffing mix (stovetop). Great flavor. I'm sure it could be used as a base with veg on hand, however I made it just like written this time. Thanks!

Chewy Chocolate Chip Oatmeal Cookies

Made these with what I had on hand which required a few substitutions, but they turned out great. I used half butter/half Crisco and old fashioned oats rather than quick oats. I also mixed butterscotch chips with chocoate using up what was in the cupboard. Will need to put these in the freezer or else they will all be gone by tomorrow.

Pan Fried Swiss Chard

Everything tastes better with bacon. Didn't add the butter (the bacon made enough fat) or the lemon juice. Probably added more than 1/2 tsp of garlic as we love it as much as bacon. Gave the pan a swig of balsamic vinegar at the end. Great way to cook chard.

Corn Tortillas

I wrote this recipe on my Maseca corn flour bag. The hot water part seems to make the dough stay together better. Also, I use the cut apart freezer quart ziplock and just wipe it off to reuse the next time. I found a Tor-Mex Hecho brand tortilla press at the thrift store for three dollars that works great. These are SO much better than store bought tortillas and are not at all hard to make. Plus your friends will be impressed by your cooking skills.

Rhubarb Cake I

I used one cup of white sugar, did the lemon juice thing to sour the milk, added four cups rhubarb and didn't put the struesel topping on (just cinnamon and sugar). Despite all these changes, the cake turned out great and I will make it again. Very adaptable recipe.

Savory Slow Cooker Squash and Apple Dish

Cheesy Polenta

Not our favorite the first night. Maybe it is that we are not familiar with the texture. I put the leftover polenta (we had lots and I didn't want to waste it) in an 8x8 pan in the refrigerator overnight, then sauteed squares in olive oil, and added ragu and parm. Everyone loved it the second night and said to make it again.

Baked Cod

Simple and easy. I sprinkled the fillets with Old Bay seasoning before using the ranch. I didn't use the butter-flavored spray and didn't think it needed it. Will make this again for a quick dinner.

Green Chile Frittata

I probably should rename my version Spinach Frittata. I followed the recipe exactly, except substituted a box of well drained chopped spinach for the green chiles and added half a sauteed onion. Worked great. Served it with sour cream and salsa. Next time when I have green chiles around I'll try it that way.

Indian Shrimp Curry

Made this tonight and really enjoyed it! I did not make any changes except for using vegetable oil (no peanut oil) and EZ peel shrimp rather than cooked shrimp. Simmered about twenty minutes to thicken it up and it was perfect! Thanks.
