No Bake Cookies IV

I love this! I bought semi-sweet and white chocolate chips. I thirded the recipe and made four different dozens. The first was by the recipe. The second I used rice krispies instead of oatmeal. The third I use the white chocolate with the oatmeal. And the fourth I used the white chocolate, nixed the peanut butter and substituted vanilla extract with peppermint extract and topped 'em off with red sprinkles! All in all it was a fun night of NOT baking. :)

Pumpkin Butter I

This is great! I got five 1/2 pints out of my batch. It's like spreadable pumpkin pie, but sweeter! I had added the 1/2 c brown sugar along with the 1 1/2 c white sugar. I'm spreading it on Grandma Johnson's Scones!

Busy Night Turkey Taco Soup with Avocado Cream

Annie's Fruit Salsa and Cinnamon Chips

This was great! I used 2 GD apples and one Fuji, I think. I forgot kiwis while at the store, and used 16 oz frozen strawberries, and I think a 10 or 12 oz bag of frozen sweetened raspberries. I chopped up everything but the strawberries. Only added the brown sugar because the raspberries were already sweetened. And I used pineapple apricot preserves. It turned out fantastic. My fiance thought the chips were too sweet so I made a couple trays worth with just the butter spray and no cinnamon sugar which turned out well for those that didn't have the crazy sweettooth that I have! This turned out really great, and we had them over pancakes with whipped cream the next morning as suggested by another review. I'll definitely make this again, everyone loved it!

These turned out great! I used an eggwash on the tops so they'd turn out a pretty color. And I subbed the raisins with blueberries. They're fantastic!

Macaroni and Cheese Casserole

Pumpkin Muffins II

I'm gonna give this 4 stars because mine turned out well and they're tasty, but I changed up the recipe a bit after realizing that I didn't have any baking soda! (ohnoes!) So I used 1 cup pancake mix and 2 cups flour. I cut the spices in half, then totaled them and used that amount of pumpkin pie spice which I believe was 3.5 teaspoons. THEN! I stole the cream cheese filling from the Chocolate Surprise Cupcake recipe, omitted the chocolate chips, and put it on top of these muffins before I baked them. I should have put it more *inside* since it wasn't heavy enough to sink as it stayed on top and just spread out. It was still tasty though! My fiance really liked these, and I do too. Mine weren't overly sweet though, I didn't cut down the sugar like others requested. But maybe I have a different sweet tooth?

This wasn't that great for us... but it did cook without any problems so it has at least taught me that I can indeed cook fish! I think we just didn't like the sweet brown sugar with the fish.

Oatmeal Peanut Butter and Chocolate Chip Cookies

I loved this cookie. The first batch was made to the directions but with chunky peanut butter. I'm always afraid of over cooking so I took them out prematurely and they ended up like soft batch cookies you buy at the store. Still tasty. After that I added more peanut butter and flour as recommended and baked longer. These were pretty fantastic. Next time I will try milk instead of water and adding cinnamon.

Festive Fudge

Awesome. Love it! So easy. I didn't have enough chocolate chips on hand, so I halved the recipe. Then I used my cookie scoop and scooped it into cupcake liners for individual bites! I had whole pecans that I didn't feel like chopping, so instead of mixing them in, I put one on top of each li'l scoopful. :)

Slow Cooker Beef Stroganoff I

Wonderful. My boyfriend and I loved this. He added shredded cheese on top of his! But I liked mine the way it was. It was good and creamy. I'm sure this will go in our regular rotation.

Pesto Cheesy Chicken Rolls

I happened to have smaller pieces of chicken, so I made about 7 mini-rolls. I thought the outside might be a little naked and boring so I added a little bit of pesto on top while baking. I also put a small piece of cheese on top for the last 5 minutes. My boyfriend and I both enjoyed it. I was pleasantly suprised as I am NOT a very good cook, I have a terrible time with grilled cheese! But that's a different story... I served it with some garlic mashed potatoes (from scratch and with out a recipe, I was proud of myself!) and some asparagus.
