Fire Roasted Tomato and Feta Pasta with Shrimp

I have given 5 star ratings before, but I have to say that this leads them all! Fire roasted tomatoes was pure genious especially when combined with the feta cheese. Because of the salt content in both the tomatoes and the feta cheese, I opted not to add any additional salt. It was not missed, in fact, it was perfect. For a double recipe I used 3 cans of the tomatoes and a pound and a half of the larger (21-25 count) shrimp. Will I make this again? , oh yeah.

Clam Sauce with Linguine

Very, very good and simple. Like many others, I made this with some variations. I used 1/4 cup butter and 1/4 cup xtra Virgin olive oil. I also used 5 cloves of garlic. I added 1 tbl of Old Bay (you may omit any additional salt if you use O.B.). After everything was brought up to temperature, I added 3 dollops of sour cream and thickened with a little corn starch. No leftovers!

Patti's Mussels a la Mariniere

Absolutely delicious! I doubled the sauce and served over linguini, and I highly recommend serving it this way. I also add a little more garlic than is called for.

Black Beans and Rice

This turned out to be a much tastier dish than I anticipated. The simple modifications I made put this over the top. I used a heaping 1/3 cup of salsa in place of the tomato sauce, added about 1 tsp or so of cumin, and salt to taste. I also used chicken stock in preparing the rice.

Cajun Baked Catfish

This was excellent. I added a couple of finely minced cloves of garlic, used garlic powder instead of garlic salt, and added 1 tsp of Old Bay. This was served over a bed of Mexican rice (Mexican Rice III from this site).

Salmon Patties I

Very good recipe, serves as a great base. I like to zip mine up a bit by adding ground cayenne pepper and some minced garlic. I also dropped in a tbl of mayo. The leftovers were great used in a sandwich the next day. Will definately make again.

Swedish Meatballs

I tripled the recipe for a work potluck luncheon. These turned out well and proved to be very popular. I added finely minced garlic to the meat mixture, and used 50 percent more allspice as well as adding both freshly ground nutmeg and Worcestershire sauce. Also, it should be mentioned that I used venison ground. Chilling the meatballs in the freezer worked to perfection. This was all prepared the night before the function. The meatballs and sauce were not combined until the next morning when both were added to a crock-pot to be transported and heated at work.

Baked Beans I

Like others, I added yellow mustard and a spicy BBQ sauce as well as sauteed diced onion. I also cut the sugar in half. Very good recipe.

Venison Schnitzel

This was terrific! I first prepared the venison using the maranade in Gordo's Good Venison recipe found on this site. I then prepared it using this recipe, with the exception of using 1/2 flour and 1/2 pancake mix. This was the best fried venison I have ever had.

Sausage Pasta

I used turkey sausage, added zucchini, and replaced the parmesan cheese with asiago, along with doubling the basil and adding a sprinkling of oregano. Cooking the penne a couple minutes less then al dente allowed me to cook it in the sauce longer, which in turn made the pasta soak up more juices preventing this from being runny. Fold in fresh spinach at the end and this was a really fast weeknight meal. Different vegetable variations will keep this fresh, making this a perfect recipe to keep in rotation.

Big Joe's Venison Steak in Chestnut Sauce

I stuck fairly close to the recipe except I braised the venison in a frying pan and used a touch of garlic. It turned out quite well.

Tomato Chicken Parmesan

I used mozzarella instead of the Jack cheese, and I made my own quick sauce. Almost as easy as opening a jar and so much better. Adding spices to the bread crumb mix is definitely needed. The cheese needs to melt for a longer period of time then the five minutes that has been suggested, if you want it to be golden brown. I served this with whole wheat spaghetti.

Broil the rolls with cheese first and no need to add the lettuce into the spread until placing on the sandwich itself. This is a keeper.

Vegan Black Bean Soup

I used more garlic, upped the carrot amount some, and added fresh cilantro just before serving, but otherwise stuck pretty close the the recipe. It turned out well and paired nicely with a loaf of Ciabatta bread.

Braised Lemon Pheasant

This was magnificent. I prepared the full recipe of the liquid (using 1/2 cup lemon juice) but for 1 pheasant. I also added about 1 tsp rosemary and used 2 garlic cloves. The sauce made great gravy once cooked down and thickened with a little corn starch.

Making a half recipe, I drained the 16 oz. of yogurt over night using a clean nylon stocking, and got nearly a cup of liquid out. Dry dill weed works well also. This is what I was hoping and looking for.

Blackened Tilapia with Secret Hobo Spices

This was quite good. I cut way back on the salt, and I am glad I did. I also found that the amount of spices was a perfect amount for 2 lbs. of fish. I served over a bed of brown rice with peas. Fish isn't always very good the next day as leftovers, but this was great the next day.
