Simply Potatoes® Cheesy Hash Browns

Everyone's favorite side this past Mother's Day dinner. Used 2 cups sour creme for a double batch, and added salt and pepper; otherwise stuck to the recipe.

Cheesy Scalloped Potatoes with Ham

I added significantly more cheese than called for, and I left out the peas because my wife can't stand them. It turned out fantastically and my wife can't wait for more left over ham so I can make this again!

Fantastic! I used a combination of many of the suggestions that together turned out to make one of the best soups we've tried: I used about 46 oz. of chicken broth, no water, 2 cups of tomato sauce, about 3/4 cup of wine (half when the recipe tells you to and half near the end). I used dried spices, but probably ended up using about the same quantities of the dried that the recipe calls for in fresh. Otherwise this might be bland. I also added a pinch of crushed red pepper, not to make it hot, but rather to bring out the flavors. oh, and I chose not to use any kind of bean other than the green.

Zucchini Boats on the Grill

I don't use olives, the bacon bits, or jalapenos. I use green bell pepper instead of the chili peppers and I add oregano and artichoke hearts to the mix. Terrific on the grill, but found it unnecessary to wrap in foil. Indirect heat right on the grate worked perfectly.

Herb Roasted Pork

Doubled all of the rub ingredients except the sugar, and I used rosemary along with the sage. I completely expected my wife to turn her nose at this, but the opposite happened! It really was fantastic!

Honey Mustard Sauce

I used a heaping cup of mayo, and about 1/4 cup each of yellow and brown mustard (along with the called-for 1/2 cup honey). Turned out excellent!

Authentic Pad Thai

My first attempt at Pad Thai, I made it according to the recipe (scaled for 8 servings). I am very happy with the results as was my girlfriend who hasn't always had a very adventurous palate. I'm looking forward to making it again in the near future, but I would probably double the sauce, lessen the chicken quantity, and add another egg.

Veggie Sausage Strata

Very, very good. I like to add some chopped asparagus and mushrooms in addition to the other veggies. I also have noticed that it turns out better if I cut down on the amount of milk somewhat (by about a half cup).

Spinach Turkey Roll

Be aware, the meat mixture really is quite mushy. I used dry breadcrumbs and ended up using about a cup and a half to make it workable. I think I would consider using just 1 egg next time. To the mixture I added some rosemary and thyme to the other ingredients because I love how they work with ground turkey. The mixture firmed up during baking, and this dish had a really good flavor, but to be honest, as strange as it sounds, I think one package of spinach is too much. I do plan on making this again, but I will do so making those changes.

Chicken Lo Mein

This turned out great. I used peanut oil instead of vegetable oil, added a little Chinese Five Spice powder, 2 heaping tablespoons of oyster sauce, and a fair amount of veggies (yellow bell pepper, broccoli, snow peas, and water chestnuts). I did not scale down the amount of liquid and it worked out well with all of the extra veggies.

Crispy Fried Chicken

Very good results. I added garlic powder and a little cayenne, otherwise this might have been somewhat bland. I served gravy over top and it stayed crispy.
