Anniversary Chicken I

Unusual flavor combination for sure. I would probably rate this a 2, but daughter and Husband really liked so it gets the 3 stars. The taste is a bit on the salty and pungent side so I think it worked that I served with a mild orzo-rice combo to mellow it out. I guess my tastebuds just prefer a more mellow flavor. Too bad if they liked it, I don't think I'd make again ;)

Broccoli Casserole III

I have been making this recipe forever. It is always requested by others at gatherings. I season thawed brocolli with salt, pepper, and garlic powder and use a 13 x 9 pan on a doubled recipe. It has never been dry as some others stated.

Fun Cookie Suckers

Cookies were good, not bland, but I did add an extra 1/3 cup of sugar to make them a tad sweeter. I did have to bake 12 minutes, not 8 as stated. Quite time consuming but the unique look seemed to be appreciated by my daugther's classroom. Next time I will try to make with boxed sugar cookie mix to cut down on time.

Wake-Up Casserole

Ok, but could probably use more eggs to give more substance. I only baked 45 minutes with foil, and 15 without and still kind of dry. I did substitute Jimmy Dean breakfast sausage for the ham because of family preference. Only used 2 1/2 cups of cheese and I think that was more than plenty. Kids didn't like and Husband only ate with tons of ketchup poured over it - now that's not a good sign.

Slow Cooker Chicken Cordon Bleu

Kids really liked. I opted to make this recipe with the stuffing on the side and poured the sauce over it since many complained of dryness. I cooked on high for 2 1/2 hours and this was fine. I added minced garlic to the soup mix. This sauce would be nice over rice or noodles which is how I will make next time. And yes, I would still skip adding in the stuffing.

Chocolate Earthquake Cake II

YUM! Important note: I only used 1 1/2 cups of conf. sugar because that is all I had on hand. There is absolutely no reason to use more than that. It was plenty sweet enough. I also cut the butter back to 1/4 cup (1/2 stick) since I was using less sugar. I saved approx 1 cup of cake batter to pour over the cream cheese mix to make is look more appealing and to stop the spillage others referred to. If served warm this recipe would be great with hot fudge and/or carmel poured over it. However, the next day the cream cheese mixture really tastes much better when chilled.

Cheesy Ranch Potato Bake

This is a keeper! I used a cheddar/monteray cheese mix and only 4 T. of butter. If you really want to add some taste and calories throw in some crumbled bacon on top. Update: Even better with red potatoes!

Chocolate Marshmallow Frosting

Sticky and sweet but good. I used 1 cup of confectionary and only 1/8 cup of fat free 1/2 and 1/2 in order to get the right consistency for a cake decorating tip. I also did not have butter flav. shortening so I used real butter. This recipe barely covered 20 cupcakes with my decorting tip. Next time I will up the ingredients a bit.

Slow Cooker London Broil

So, so easy and the gravy was great. I used only a 1/2 pkg of onion soup mix and this was plenty. I added 1 T. of worcestershire. Cooked on high for 1 hour, low for 6 hrs - this was enough to make it fork tender. Served over mashed potatoes.

Spinach Quiche

Kind of tasted like Greek spanakopita. Ok, but I've had better quiche combos. Only used 1/4 cup of butter or a 1/2 stick...seemed crazy to use a whole stick.

Daria's Slow Cooker Beef Stroganoff

A keeper! I used 1/4 cup of red wine instead of white and it worked out fine and probably gave a more pleasing color. I used 2 t. worcestershire and 2 beef bouillon and only 8 oz. of sour cream. This gave the recipe the perfect amount of flavor. Cooked a total of 7 hrs on low and it was very tender.

Overnight Coffee Cake

Definately too much nutmeg, it overpowered the coffee cake. I will try this recipe again with only 1/4 to 1/2 t. Although I loved the convenience of making this a night before, I think most coffee cake recipes could be done this way. If I make this again I will try adding strawberry jam under the crumb topping or perhaps chopped apple, it seemed like this recipe was missing something.

Inside Out Ravioli II

Quick, simple throw together dinner. I had all these ingredients on hand. I did add 1 can of diced tomatoes and only used 1 jar of tomato sauce. I seasoned the meat/spinach mix with salt, pepper, onion and garlic powder. Only baked 30 minutes.

Easy Morning Glory Muffins

Although the flavor was nice on these I thought they were a lttle dry (although I must confess I used 1/2 oil and 1/2 applesauce). I will try again but I am going to add crushed pineapple and more shredded apple. I think this recipe can be perfected.

Dark Chocolate Cake I

Don't change a thing! I made the recipe just as stated and it was perfect. The cake was moist, dense, and had a rich chocolate flavor. I frosted with chilled 'chocolate ganache' from this site.

Chocolate Ganache

I made this recipe with Nestle semi sweet morsels. The texture was nice and it set up well after being in the fridge for about 45 minutes. This made it spreadable instead of pourable. I also tried the same strategy with white nestle chips. These didn't firm up as well (even after a few hours) but it was still good. I used both of these ganache mixes over 'dark chocolate cake 1' recipe from this site, the vanilla between layers and the choc. on the sides and top. Incredibly fattening, but oh so good! I think with a better quality chocolate this could be a 5 star recipe.

Microwave Corn on the Cob

Less cleanup than boiling and just as good. The 5 minute microwave time will definately make the corn soft, use less time if you like your corn crisper.

Slow Cooker Lasagna

This was a good slow cooker recipe although not as good as an oven baked lasagne. Good for when a crock pot meal fits your days agenda. I agree with others that the noodle consistency gets a bit rubbery. I also found that I needed to add approx. 1 cup more of sauce than stated otherwise it was drying out. I layered ingredients instead of stirring and cooked for 3 hours on low which was plenty. I will make again and experiment with subsitutions like ground beef, zucchini, eggplant or spinach.

Classy Chicken

Very sour! It bothered me how poor tasting this dish was. I doubled everything except for the chicken because I wanted to serve the extra sauce over angel hair pasta. I guess with all the combos of sour (dijon, dry wine and sour cream) I should have realized it could turn out that way. I would have only rated 1 star if I hadn't altered the recipe by doubling the sauce. However if the sauce was any good this should not have made a difference. BTW, I checked and rechecked the recipe to ensure I made it correctly. Way to pungent for my taste. YUCK, not worth the ingredients.

Famous Pork Chops

A nice quick meal alternative. Used boneless pork chops (1/2" thick) and baked for approx 30 minutes. I only used 2 eggs and found a 1/4 cup of butter was plenty. I turned half way through to make a bit crisper. Served with twice baked mashed potatoes from this site.
