Banana Sour Cream Bread

Halved recipe and used 4 ounces of unsweetened applesauce in place of the butter called for. I was going to make 2 loaves but realized I have only 1 loaf pan. To save time I poured into a 7x11" brownie pan and baked @ 325 degrees for 1 hour 5 minutes. It came out perfectly baked. Next time I will substitute some splenda to cut the calories down even more. This recipe is good at 4 stars but the 'Banana Crumb Muffin' recipe from this site is better at 5 stars.

Luscious Buttercream Frosting

Very sweet but that is what buttercream is all about I guess. I think next time I will scale back a 1/2 cup of sugar.

Black Magic Cake

Ultra moist, dense, and chocolatey! The only substitution I made was using 6 oz. of vanilla low fat yogurt and 2 oz. of fat free half and half for the 1 cup of buttermilk that I did not have. Frosted with 'Luscious Buttercream Frosting' from this site. Cake can be crumbly when frosting, I popped in the freezer to firm up prior to frosting.

Clone of a Cinnabon

Clone of a RAW Cinnabon perhaps! 15 minutes at 400 degrees is not adequate to bake these. They were baked on the outside, mostly raw dough on the inside. NO, there is nothing wrong with my oven temp. Unfortunately we realized after frosting that they were severely under cooked. Tried baking longer but the center would not setup. They probably would bake better at a lower temp for more time. Also, they were ultra sweet (too much sugar) and cinnamony (only used 2T.) Frosting is awesome however. Recipe could be tweaked, but not worth the labor intensive work. Kids say they prefer the Pillsbury kind - say no more.

Baked Spaghetti

I assembled this recipe per others suggestions and based on a standard lasagne assembly. Lined the bottom of the pan with extra sauce and not foil. I also seasoned the spaghetti with some garlic powder, salt and extra parmesan since others complained of this layer being dry and/or bland. I then put most of the mozzarella over the ricotta layer, topped with the meat sauce, and a small amount of the remaining mozzarella. As a result it was flavorful and moist. Next time I will throw in a layer of seasoned spinach to add some veggies to the recipe.

Spinach Cheese Manicotti

4 1/2 stars actually. Seems weird adding water to the sauce but it does bake out and doesn't ruin the sauce. I made the stuffing of the manicotti super easy by using a Wilson cupcake decorator. I seasoned the spinach with salt and garlic powder prior to adding to the cheese mix. Spinach can be very bland if it is not seasoned correctly. Needed to bake 60 minutes. I made a double batch and froze for next time. Even the kids enjoyed.

Rempel Family Meatloaf

I made this recipe with ground turkey. I used A-1 sauce for the steak sauce and this may have been a bit powerful against the ground turkey. IF I make again, it will be with the beef as called for, but I think I will try worcestershire for a milder taste. BTW, kids wouldn't touch.

Home Style Macaroni and Cheese

I doubled the recipe because 7 oz of pasta is usually less than half of a box, not enough. However by doing so it made WAY to much sauce and I ended up using only half of it with the full box (16 oz) of pasta. This recipe was okay, but probably not a redo. We definaly prefer the 'Chuck's Favorite Mac and Cheese' recipe from this site over this one.

Whole Wheat and Honey Pizza Dough

I would probably give 3 1/2 stars for taste, but rounded up to 4 stars because of the healthy recipe. I baked the crust prior to adding toppings for 15 minutes. The crust was still a bit soggy even after the pre-bake. I used low fat mozzarella, jarred sauce (gasp) and turkey pepperoni. It was a tasty pizza treat without all the guilt, but unfortunately I still prefer traditional pizza with a side of guilt.

Pumpkin Cream Cheese Muffins

Cream cheese layer is a really nice addition. I think it looked best when I added a small amount of muffin mix over the cream cheese mix, and then topped with streusel topping. I added some brown sugar into the streusel topping and I think next time I will skip the white sugar all together.

Chicken Piccata II

Doubled the sauce. Stuck with recipe except added a bit of cornstarch mixed with cold water to the sauce mix in order to thicken a bit. Next time will add some crushed garlic to sauce in enhance. Definately a redo.

Hockey Pucks

OMG!! So simple I had my young daughters assemble as an activity to keep them busy. So good, they were hard to stop eating. I used 36 crackers or 18 cookies total and used a 12 oz bag of milk chocolate chips that I just melted in the microwave and dipped the sandwiches in while using 2 forks to hold onto. Just the perfect amount of chocolate. Sprinkled with decorative sprinkles. I have got to try these with rasberry jelly and/or marshmellow fluff. So additive.

Half and Halfs

What a neat idea. Why didn't I think of this before? I made exactly as stated except I baked for 14 minutes at 350 degrees. The recipe made 41 generous sized cookies. I made for a kids school event and they were gone immediately.

Caramel Apple Bread

Tasty! I calculated this recipe to be 3.5 Weight Watcher Points (without the nuts)based on 1/12 of the loaf. I used fat free vanilla yogurt because this is what I had on hand, and 4 small macintosh apples. I may have cooled the carmel too much because it ended up being more of a crumble than a spread as anticipated, but not a problem, it still tasted good. The bread itself is not overly sweet, but the carmel topping adds the right amount of sweetness. Pretty good for a lower fat recipe.

Easy Company Chicken

Company chicken?-No. Quick weekday homecooking?-Yes. The presentation is lacking on this dish, but the sauce is nice served over rice with a side of broccoli. Kids loved and very quick to throw together. BTW, I used low fat soup and mayo, and it was just fine.

Jam-filled Muffins

These muffins have a dense texture (which I like) but resemble more of a cornbread consistency than a traditional muffin. If you like a spongy, moist muffin these are not for you - they are a bit dry. They jam counters the dryness of this muffin a bit. I substituted lemon juice for lemon zest and I added slightly more than the 1/2 cup of jam called for. I could not even taste the lemon. If I make again I am going to skip the lemon and add almond extract because I think that will make a better flavor combo.

Easy Mexican Casserole

Per others suggestions I mixed a 1/2 pkg of taco seasoning into meat. Cut the fat on this recipe by using turkey meat, low fat sour cream and cheddar - still very good. I substituted canned diced tomatoes for the fresh. The crushed chips on the bottom DO get soggy. I liked this taste but if you like your chips crunchy I would leave out when baking and serve mixture with chips after baking. Served over lettuce.

Mushroom Chicken Piccata

Sauce is good but only the faintest taste of lemon. If you are a lemon fan I would definately add more. I made this recipe as stated except I removed the chicken while I browned the onion and mushrooms. I think with more lemon and fresh garlic added this recipe would be 5 stars.

Blueberry Cream Muffins

These had a nice flavor. I halved the recipe to make 12 very large muffins. I increased the sugar by a 1/4 cup (a combo of white & brown sugar). I also substituted an equal amount of unsweetened applesauce for the oil and used lowfat sour cream - no need for the full fat ingredients here.
