Irish Cream Chocolate Cheesecake

Good consistency and recipe that went over well with guests, but I decided I prefer 'regular' cheesecake. I made as stated except used 1/3 cup of Bailey's Irish Cream. I love my Bailey's, but I prefer it in on ice.

Cake Balls

OMG, the possibilities! For my 1st attempt I stuck with all chocolate combos and they are terrific. Frozen cake balls are the trick. Frozen to roll and frozen to dip. And a full 24 oz of choc almond bark per cake mix box (3 oz per recipe, how is that possible?) I think I will be experimenting with different flavor combos for the next 50 years (if the clogged arteries don't do me in ;)

Cheesy Chicken Meatballs

Sticky mixture for sure so in the interest of time I made this as a small meatloaf instead of meatballs. I baked at 375 degrees for 45 minutes per anothers suggestion which worked great. I only used 1 egg and plain lite cream cheese (never seen a roasted garlic cc in our stores) and no added oil (simply not necessary). Nice flavor and light texture. I served with marinara sauce and angel hair. I will make again next time for meatballs grinders.

Fluffy Peanut Butter Frosting

Decadent! This recipe is very similar to the 'peanut butter frosting' recipe on this site. The only difference is whether to add 2 cups of confectionery sugar (as this recipe states), or 4 cups as the other recipe states. Sooo, you guessed it, I added 3 cups of confectionary sugar. I tasted after 2 cups and it was good, but I wanted to cut the pb taste just a tad so I opted for the extra cup of sugar. It would be fine either way. A redo!

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

These were okay, but certainly not "the best" or 2nd best for that matter. 20 minutes is overbaking in my book. I yielded only 32 large cupcakes, baked at 20 minutes they were a bit dry. In other words 48 cupcakes at 20 minutes is too much. Also, I made 1 batch with the brownie on bottom as stated, the other batch was layered as cake/brownie/cake. I definatley think the brownie bottom works best for a chewier brownie consistency. I really didn't find these to taste much different than a marble cake recipe, which is less work in the long run.

Spinach Turkey Roll

Good but could be better, kind of bland. I followed this recipe as stated except I added a little salt to the meat and spinach mixture. I think this recipe has potential if it is spiced more to taste but as written it is bland. If I would make again I would add parmesan to the spinach mixture and a more flavorful cheese other than mozzarella. The mutz gives absolutely no flavor to this recipe only added calories. It did smell wonderful when it was in the oven, but it kind of fizzled out when you tasted.

Boston Cream Pie II

I made this recipe as stated but this recipe does not represent the true creamy dessert. The chocolate topping turned into a hardened shell which was difficult to cut. The custard was good by itself when first made but the consistency turned lumpy and thick once it cooled and it sucked all the moisture out of the cake as it continued to turn into a thick gelatin mass. There was nothing creamy about this cake at all.

Simple Ranch Chicken Macaroni Salad

A quick throw-together. This recipe was ok and I would probably make again for a quick side dish. I skipped the canned chicken and olives because this recipe does not need more saltiness. I substituted thinly sliced carrots which I par boiled with the pasta for the last 2 minutes of boiling. I doubled the recipe but not the ranch dressing and it was fine.

Chocolate Candy Bar Cake

Substituted 'Dark Chocolate Cake 1' for boxed recipe but liked the frosting. Didn't add regular sugar, only conf. > it was plenty sweet. Will try again with boxed mix for a quicker dessert.

Buffalo Chicken Burgers with Blue Cheese Dressing

Light and moist. Yes, I altered the recipe but it was in the interest of time. I just used store bought buffalo sauce and blue cheese dressing. I did add approx. 1/2 cup flavored breadcrumbs to firm up and put in the freezer for about 10 minutes, they are quite wet. I added extra buffalo sauce on mine afterwards to kick up the eat, but the kids enjoyed the mellower taste. These are definately a redo.

I only used 1/4 cup of butter and they were fine. 1/2 cup (1 full stick) is a ton of butter but go for it if your conscience can handle it. I also used fat free sour cream. I added a touch of onion powder. Kids loved!

Zesty Slow Cooker Chicken Barbecue

Love this recipe! I don't know what I liked more the taste or the ease of preparing. I used fat free Wishbone Italian and Sweet Baby Ray's BBQ and the only change I made was to add about 1T. of minced jarred garlic. I used fresh (not frozen) breasts and cooked on low for 4 hrs. I shredded the chicken after 3 hours and added a bit of flour to thicken. I served this on hard rolls with cheddar on top. This will be a definate picnic staple.
