Sam's Famous Carrot Cake

35 minute bake time when using 2 9" round cake pans and it was more than done!! I omitted the coconut (daughter doesn't like) and added a total of 3 cups of minced carrot. Although the cake is delicious as made, for those who prefer a bit less of a textured cake you might want to skip the walnuts and/or raisins. Also, I never add more than 1/4 cup of oil to any recipe, this recipe called for 3/4 cup (yuck)...I subbed 1/2 cup of unsweetened applesauce and it was divine! Cream Cheese Frosting II from this site was perfect on this cake. Moister as of day #2.

Chicken Noodle Casserole I

Recipe as is was a bit bland. Added seasoned chopped and thawed broccoli and seasoned chicken with salt, garlic, and celery salt when boiling. Added a cup of cheese.

Cheddar Bay Biscuits

For such a simple recipe, an awesome turnout. I added 1/4 teaspoon of old bay seasoning to the butter mixture. FABULOUS! These biscuits reheated very easily with one toast cycle on my toaster oven.

Cinnamon Coffee Cake II

Sweet, moist, and tasty! I used a 'pudding in mix' cake box so I skipped the 2nd pudding (also didn't have 1 in the cabinet). Subbed 1/2 cup of cinnamon applesauce for 1/2 of the oil, you would never know. Baked 20 minutes at 350 and 30 minutes at 325. I think diced apples would be a nice addition to this cake, next time...

Sugar Cookie Icing

Hardens Beautifully! This recipe will need a bit more milk to get to the right consistency, but don't overdo. Add a little at a time. I separated into small individual 'chocolate mold' for ease of decorating.

Mrs. Sigg's Snickerdoodles

I rolled these into 1" balls and baked 10 minutes, no more. They will appear unset initially but will firm up after resting. I subbed 1t. of baking powder for the cream of tartar which I didn't have on hand. I also used all butter since my daughters lectured me on the hazards of shortening and trans fats, couldn't notice a difference.

Apple Pecan Cornbread Dressing

A nice change from my traditional celery and onion stuffing. Per others suggestions I only used 1 cup of apple juice and then used 1 cup of chicken broth. I could see how 2 cups of the juice would make this extra sweet instead of slighly sweet. I used 3 fuji apples which was a good flavor choice.

Chef John's Make-Ahead Turkey Gravy

Absolutely Awesome, worthy of 10 stars. This was time consuming but I made the day before Thanksgiving to free up the last minute crazies. I used 4 1/2 cups of water and 3 1/2 cups of turkey stock (large box), totaling 8 cups of pre-recipe liquid and it yielded approx. 4 cups of finished gravy. I was concerned that 10 cups of plain water may leave an unflavorful gravy, glad I adjusted.

Enchanted Sour Cream Chicken Enchiladas

Very good but a bit time consuming if you need to saute the chicken for this recipe. Definitly quicker if you have leftover or a store baked rotissiere on hand. I opted to add 1/2 cup of salsa to the chicken and sour cream mix to moisten per others suggestions. This recipe is not overly wet, but could be remedied with enchilada sauce on top if you prefer a 'wetter' enchilada.

Ribboned Fudge Cake

3.5 stars actually. This cake was good, but seeing that it is made from a boxed mix it doesn't rate any higher. The cream cheese layer is very tasty and the "Satiny Glaze" recipe from this site is always perfect. Like others I used coffee in place of the water and some unsweetened cocoa to give a deeper chocolate flavor (a well known trick) which helped the 'boxed' flavor, but I think I might have to retry this recipe with a 'from scratch' chocolate cake to give it the 5 stars I think it could earn.

Cavatelli and Broccoli

I simplified the cooking process on this one. I just boiled the broccoli, drained, and then added minced bottled garlic and about 1 tablespoon of salt along with the olive oil. I let this mixture sit while I boiled the pasta. I think it is important to season the broccoli prior to mixing with the pasta, otherwise you end up with a bland combo. Also a key part in boiling any pasta is adding salt to the water in order to compliment the true flavor of the pasta. Next time I may add some sweet Italian sausage or sauted chicken along with the broccoli into to serve as more of a main course.
