Chocolate Chocolate Chip Cookies I

I was looking for a recipe I could adapt to make mint chocolate chip cookies, and this worked perfectly. Add 2 tbsp creme de menthe liqueur, and two packages of chopped up Andes mints instead of the chocolate chips. They might need to cook for an extra minute with the additional liquid. Both the original version and my doctored version got rave reviews!

Couscous and Cucumber Salad

Great recipe. I left out the lettuce, but added in half a jar of finely chopped sun dried tomatoes and used the oil from the tomatoes in lieu of the olive oil - it gave the recipe a nice zing.

Spinach and Mushroom Casserole

I brought this to a potluck, and everyone wanted the recipe (even some of the non-cooks, since it was so simple). I used 2 packages of frozen leaf spinach instead of fresh as suggested by another reviewer, added garlic powder, and didn't bother to cook the mushrooms first (though this releases quite a bit of liquid). Also, I definitely think it's better with Swiss cheese than cheddar.

Spicy Grilled Chicken

Fantastic! I doubled the lime juice and garlic, and let it marinate for an extra half hour or so, and it got rave reviews.

Brazilian Black Bean Stew

This was excellent! I followed previous reviewers suggestions and added extra mango and cilantro. Unlike some reviewers I didn't think there was too much liquid - it was good for cooking the sweet potatoes, and I just simmered it a little longer to cook off the liquid. Finally, I replaced the chorizo and ham with about 3/4 pound of Italian sausage, which was just the right amount.

Spicy Pear Cookies

I thought these were terrific, and they went very quickly when I brought them into work. I didn't have any raisins so I used chopped up dried apricots instead, and they went really well, I think I'll use them again next time I make it.

Butternut Shrimp Soup with Sherry

Absolutely amazing. I was a little skeptical of the strange sounding combination of ingredients, but decided I'd try it anyway because of the rating. My husband was raving about it for days! The only thing I changed was to use a little more shrimp than the recipe called for. Next time I might add a small amount of drained diced tomatoes at the end for some extra texture, I think it would go nicely.
