Eggnog Quick Bread

I make this into muffins instead of a loaf. To avoid it being dry, as others have experienced, I use 1/2 a cup of veg oil instead of butter, and add a banana or two. My kids LOVE them.

Spinach Brownies

I made this for a potluck luncheon at work and everyone raved! I made a couple of changes though...the butter amount seemed excessive so I cut it to about 3 Tbsp and used it to saute the onion as well as some red pepper and garlic with a good dash of black pepper. Instead of the mozza I used a cup of crumbled feta for a more greek-style flavour. LOVE this.

Mixed Seafood Curry

This recipe was excellent! I added a little more brown sugar and about a tablespoon of peanut butter because we prefer a sweeter curry. I only had jumbo shrimp available for fresh seafood but I'm sure it would be great either way. I'm definitely adding this one to my 'favourites' list!

Apple Crisp III

Daria's Slow Cooker Beef Stroganoff

We LOVE this dish! It's super easy too - just throw everything into the slow cooker in the morning and it's done at dinner time. All you are left to do is boil the noodles. I usually add some chopped celery, carrots, and fresh mushrooms (instead of the canned) to sneak in some veggies where the kids don't even notice them.

Peach Cobbler V

I used fresh peaches from our tree and took other readers advice and added some sugar and lemon juice to make them a bit more 'saucy'. It was a little more cakey than I had expected but my family liked it. I think I would use unsalted butter next time as I found it a little salty around the edges where the butter pooled a little.

Low Carb Cauliflower Leek Soup

This soup is great! I use the Campbell's low sodium chicken stock and also add a handful of lowfat cheddar cheese after pureeing the veggies and it tastes wonderful.
