Oatmeal Chip Cookies

Thank you I finally found the perfect oatmeal cookie recipe! Followed the recipe and it turned out great, crispy outside and moist & chewy inside. Next time I'll add cinnamon, nutmeg and cloves for added flavor.

Delicious Chicken Casserole

My family LOVED this recipe. I didn't follow it exactly, casseroles are very forgiving making them great even if you don't have all the ingredients, or want/need to substitute something. I did double the rice (I used 1 c. UNCOOKED rice, which would make 2 c. cooked, which I think is what the recipe should be) I cubed the chicken and sauteed with butter and garlic and added a bit more of the seasonings. I divided it among 2 square pyrex glass dishes and froze one. It came out perfect both times (even after freezing). Thank you for such a simple, yet delicious recipe!

Chicken and Tortellini Stew

Hubby & kids liked it, definitely on the rotation. I added some garlic and a dash of Worcester sauce (I don't usually change a recipe I rate but this was just a bit bland for me).

Oatmeal Peanut Butter Bars

These reminded me of the no-bake cookies minus the cocoa. If you underbake them slightly they are soft, bake them a little too long and you have granola, either way the taste is very, very good! I only used oats, my younger kids don't care for nuts.

Broccoli Salad I

I made it as stated on the first try, but the vinegar was so overwhelming to me. The second time I tried it I used only 1 1/2 Tbsp. of apple cider vinegar & it was perfect for my taste. (I was looking for something along the lines of what walmart deli used to sell) and I found it!

Best Big, Fat, Chewy Chocolate Chip Cookie

Followed the recipe exactly as written & refrigerated dough for 10 min. after I formed into balls and placed on cookie sheet. Baked for 17 min.; they came out perfect! The more choc. chips you have in your dough, the thicker they will be. I also added nuts to part of my dough and they came out looking like the cookies at the mall. Great recipe, thanks!

Bourbon-Glazed Ham

You REALLY have to like bourbon to like this recipe. Apparently I'm not a fan of bourbon. I cooked it according to instructions and it came out mushy, maybe it was the marinating for 8 hours, I don't usually marinate, just pour the glaze on and bake. There was no saving this recipe, the marinade penetrated too deep.

Baingan Bharta (Eggplant Curry)

This is really good. Very flavorful! I'm new to indian dishes and this is the first curry recipe I've had that I like. Its very easy to control the heat by just adding a tsp. or 2 of jalapeno instead of the whole thing. This will be even more flavorful the next day as the flavors have a chance to meld together. I didn't use commercial curry powder (nasty), I made my own using ground coriander, fenugreek, cayenne, and turmeric and I think that probably helped with the flavor.

These were pretty good, I like them a little sweeter so I'll add another 1/4 c. sugar, but the texture was perfect. I rolled mine in powdered sugar twice as soon as they came out of the oven.

Easter Breakfast Casserole

Didn't have frozen hash browns, so I peeled and shredded 4 medium sized (enough to equal 16 oz.) red potatoes and baked at 400 for about 20 min. I only used 1 1/2 c. milk and kept everything else the same and shortened the baking time to 25 min. uncovered.

Whole Wheat Ginger Snaps

Whoa Momma! These are great! A very forgiving recipe since I was low on molasses and had to sub with some brown sugar. I also didn't have allspice or nutmeg, so I added extra cinnamon, cloves and ginger to make up for it. The taste was great, you can't taste the WW flour. 9 min. for perfect chewy cookies.

Quick and Easy Pizza Crust

I had a great experience with this recipe. I followed exactly as written and used bread flour; maybe that is the problem with some reviewers since bread flour will produce a chewier crust than A-P flour. The flours really aren't interchangeable for a pizza crust because the all-purpose flour has less protein than bread flour.

Golden Sweet Cornbread

Very good recipe. Light, fluffy and moist. I followed CORBALEYSK's advise and used nonfat dry milk powder + 1 cup of water since I have 3 kids who devour my refrigerated milk and this turned out tasting great and didn't crumble.

Chi Chi's Corn Cake

I substituted creamed corn and left out the water and it came out great! If you are looking for a more firm consistency, this isn't the recipe for you; this is supposed to be scoopable, so it will be much softer. Very tasty, I used it as a dessert! Thanks!

Balsamic Vinaigrette

I use this recipe all the time, I don't even bother with store bought dressings anymore. I put mine in a blender and puree and you don't have the problem of the oil and vinegar separating.

Roasted Pumpkin Seeds

I agree with joscrazym in that you have to boil until grey (about 10-15 min.) before baking them. I've tried for many years to roast pumpkin seeds and they never turn out right, but I took his advice and they turned out great - so much flavor on the inside and not just the shell!

Super Easy Doughnuts

These doughnuts tasted 'off', maybe because of the vinegar. I used half the milk and still had to double the flour and the dough was still sticky. If you followed the recipe exactly (minus the vinegar), you would have a really good funnel cake recipe. :-) I'll just stick to refrigerator biscuits next time. Sorry!

Fresh Rosemary Bread

I left out the rosemary so I could make mini-burgers using this bread recipe (placed everything in bread machine and pushed 'dough' then rolled into golfball sized balls and baked at 375° for about 12 min.) Kids gobbled them right up!
