Banana Crumb Muffins
Fabulous recipe! Per other reviewers suggestions I substituted oil for the butter then added 1 tsp. nutmeg and 1 tsp. cinnamon to the mix (was out of vanilla or would have added that as well, but honestly they didn't need them!). I had 4 medium sized incredibly ripe bananas so I used them all and actually could have gotten 14 good sized muffins out of the batter (instead I got 12 HUGE muffins, Mmmm!). So moist and flavorful, perfect texture, baked up in around 18 minutes. I was busy doing other things so added the topping when I popped them into the oven instead of waiting til last 5 minutes as other reviewers suggested but it didn't make any difference..the topping was wonderfully tasty! Just what I wanted on this cold winter day, my 3 year old had an entire huge muffin to himself and is asking for more! Thank you so much for sharing!

J.P.'s Big Daddy Biscuits
I was not impressed with this recipe, but I think it could be improved's a good base. I followed it exactly for the first batch and the biscuits were rather flat and way too salty. For the second batch I cut the salt to 1tsp., used margarine instead of shortening and didn't knead them or roll them out, just patted them to about 1.25 inch and then cut out. I had better results with a small circle as far as rising goes. These were nowhere near the Grands biscuits but I'll keep working with recipe to see if I can get there. Thanks for a great base!

Angela's Awesome Enchiladas
My hubby and I agree..this is the best mexican I've ever made! I am not normally a fan of made at home mexican (hubby loves it, however) but enchiladas just sounded good so I decided to give this a try. Oh my gosh, completely fantastic! I will definitely make this again and again (doubt hubby will let me forget about it!). I did everything just as the recipe states..I did have trouble making all of the filling fit into 5 tortillas so it ended up more like a casserole than straight up enchiladas but we didn't care, it was too tasty!
