Champagne Shrimp and Pasta

I thought the dish was a bit too sweet. I also didn't have enough sauce to coat the pasta well. I may have cooked off too much of the champagne though. If you like sweet dishes, you'll enough this.

Mama's Italian Wedding Soup

I changed this recipe just a bit. I used egg whites only (2 egg whites to one egg), oatbran instead of bread crumbs, fat-free parm. chz., Italian seasoning with additional basil, and garlic for the meatballs. I cooked the meatballs in the oven for 15-20 minutes at 350 and then patted off the grease. This makes a healthier meatball as well as a delicious one. Then I followed the recipe as it goes except I added salt, pepper, and basil to the broth before the first boil. I also waited for the second boil before I added my pasta. This soup was delicious. My boyfriend loved it, I loved it - just a wonderful array of flavors.

Charley's Slow Cooker Mexican Style Meat

I followed others' advice and cut down on the hot peppper sauce and only used a 2 lbs. roast. However, if you like spicy food (somewhat), I suggest using atleast 3 oz. of hot pepper sauce and maybe evening adding more chili powder and cayenne pepper. I also added garlic. Otherwise, the roast was tender and delicious in tacos.

Chicken Gumbo Soup

I made this in a crockpot and used 6 cups ck. broth and 2 cups water. Maybe it was the crockpot, but the pasta was chewy and the soup itself was so-so. We added creole seasoning to spice it up.

Cajun Shrimp Orecchiette

I thought this recipe was way too spicy!!! And I only put in 1 TBLS of creole seasoning and pepper. Next time I will only use a tsp. of both. I followed others suggestions and added 2 TBLS of tomato paste and a little cornstarch to thicken the sauce. I also added fresh sliced mushrooms. Except for the extreme heat, this dish was delicious.
