Scottish Shortbread IV
These are my favorite short bread cookies. I make them as directed, except that I shape them like regular cookies. I usually end up using about 4 cups of flour unless I am rolling them out to make actual shapes, then I use a little more. I bake them for about 20 minutes, though I have figured out "just" the color I like them and try to watch the last few minutes to be sure. These are so delicious with coffee or hot tea.

Coconut Bread II
This is a fabulous recipe. I followed the instructions exactly, except for adding a glaze to the top. It made 3 smaller loafs and I baked for 50-55 minutes. The glaze listed in one of the reviews is the perfect addition to it, just amazing. I love coconut and this didn't disappoint. My kids think I am a great chef now and asked me to make it again soon! For the glaze (if you don't want to search the other reviews): 1 cup of sugar 1/2 cup of water 2 tbsp of butter (I used salted) 1 tsp of coconut extract (or 2 if you really like coconut flavor) While the bread was warm, I poked holes all over it with a knife and then poured some of the glaze over it slowly so it would sink in a little. After it had cooled some, I used a kitchen brush to spread some more glaze on the top.

Cream Cheese Mints
These are soo yummy! Read a lot of the reviews and modified as such. I used 4oz of cream cheese, 4 cups powdered sugar, 1/2 tsp of peppermint extract and 1/4 tsp vanilla extract. Mixed with hand mixer. Then I "powder sugared" the counter each time I rolled out a golf ball sized piece and cut them into little squares! Made sure to roll to the size I liked, but also making sure there was powdered sugar left on them so they wouldn't stick to each other and also so they would look pretty. Halfway through, I added 2 drops of food coloring to the rest so I had some green and some white mints. Very easy and yummy. Messy, but fun with a 3 and 7 year old.
