Cranberry Swirl Coffee Cake

What a great cake! Moist and delicious with just the right balance of tartness and sweetness. I used nonfat plain yogurt instead of sour cream and used freshly made cranberry sauce instead of canned. Perfect for the holidays and all year round.

Rosemary Chicken

Great recipe! As others have said, the onions did not caramelize. They were just barely cooked, even a little crunchy. Next time I'll try moving them to the bottom of the pan after the first 15 minutes and see if that works. Otherwise, I'll sautee them first as another reviewer suggested. I used 3 chicken breast halves, 3 Tbsp. extra virgin olive oil, 1 Tbsp. salt-free Cajun seasoning, 1 tsp garlic powder, 1 tsp onion powder, 1 heaping tsp fresh rosemary, a moderate amount of salt, and a large Spanish onion. The flavor was fantastic!

Black Magic Cake

Delicious and moist! I used brewed expresso coffee and nonfat plain yogurt instead of buttermilk, and used a cocoa/expresso glaze/icing. It came out great!

Chocolate Cupcakes

These cupcakes are pretty good, but nothing exceptional. Also, the instructions are misleading; they say to cream 3 Tbsp. of butter with 1 1/2 cups of sugar. It's virtually impossible to cream such a small amount of butter with 8 times the amount of sugar! The butter will never get creamy, but will stay overly grainy and sugary from all that sugar. A much better and simpler way is to melt the butter and add it to the wet ingredients, and then add the sugar to the dry ingredients. The best part about these cupcakes is they are lowfat!

Gramma's Apple Bread Pudding

Very, very delicious!!! I omitted the raisins and added 1 Tbsp. of Bourbon and 1/4 cup of chopped, toasted pecans. I did not make the vanilla sauce, but served it with vanilla ice cream instead. Also, I used mostly whole wheat bread with a little cinnamon bread thrown in. It came out great and I will definitely be making this again!

Banana Wheat Bread

This is an excellent and healthy bread!! It's not overly sweet, has a great texture, and is perfect for breakfast or a snack. The only problem is that the nuts are missing from the list of ingredients, but the usual 1/2 cup of chopped pecans or walnuts works out fine.
