Pasta Primavera with Italian Turkey Sausage

Reviewed: Jul. 18, 2014
Very tasty! We ditched the red pepper flakes entirely because we weren't wanting a spicy dish. There is a LOT of food when this is all said and done, so we didn't need any sides. Overall, we loved it and my husband wished he had work in the morning so he could take leftovers in for lunch to show off.

Tilapia Scaloppine

Reviewed: Jul. 17, 2014
This is absolutely delicious! My husband and I loved it. It has plenty of flavor without being overwhelming and it didn't over cook the tilapia when I made it. I would suggest using a small lemon instead of a larger one, this will make sure the flavor doesn't take over the dish.

Baked Chicken and Zucchini

Reviewed: Jul. 15, 2014
This was a great recipe! The only downside was that there was a LOT of tomato. We love tomato and all, but it was too much for the dish. Otherwise, amazing and it doesn't need any kind of changing or tweaking aside from less tomato.

Banana Sour Cream Bread

Reviewed: Jul. 10, 2014
This is a pretty great recipe. It makes a lot of bread and it is fairly simple. The bread is incredibly moist even though the crust that forms on top is a little deceiving of that. I love it and my husband will easily go through all four loaves if I let him.

Chicken, Asparagus, and Mushroom Skillet

Reviewed: Jul. 10, 2014
This is a good basic start for a meal. It has just enough flavor but there is nothing extraordinary about it. However, it allows for a lot of versatility. I look forward to playing with this one and putting my own little twists on it.

Mango-licious Tilapia

Reviewed: Jul. 7, 2014
The fish was fairly plain. Nothing wrong with that but it has to be a pretty great recipe for me to like pairing my protein with fruit. The salsa on the other hand -- amazing. My husband loves it and I'm certain I will be making it again real soon.

Coriander and Cumin Rubbed Pork Chops

Reviewed: Jul. 7, 2014
This was a really great, flavorful dish. Easy to make. The only thing that I had any difficulties with was figuring out what to pair it with.

Sesame Tilapia

Reviewed: Jul. 1, 2014
This is a very simple, light, easy dish to make. I added in some green onion as well and it went perfectly with the flavors. I'm not quite sure what to do as a side since the fish isn't a meal on its own.

Chicken Wellington Casserole

Reviewed: Jun. 30, 2014
I thought this was a good recipe but I also added a few things along the way. I put in WAY more onion than it said to but we like onion. I also added some Italian seasoning, garlic, and lemon juice. This recipe is very hands on and takes quite a bit of time but the result is delicious and worth it.

Ginger Lime Pork Tenderloin

Reviewed: Jun. 18, 2014
This was a good little recipe. We paired it with egg noodles and we turned the marinade into a sauce instead of tossing it by boiling it down and adding a cornstarch slurry. There was a little too much lime for us, so I will probably only squeeze half of one next time. Also, I didn't have chile-garlic powder like it called for. I should have added more garlic in that case. All and all a good recipe. Plenty of room to play but a solid base.

Onion Chicken in Balsamic Sauce

Reviewed: Jun. 16, 2014
This recipe is amazing. We were trying to figure out if we wanted pasta or rice to accompany this, but after making it the first time slices of french bread are the way to go. It is perfect for soaking up all the left over deliciousness left over. The leftovers were good, just be aware that the longer the sun-dried tomatoes sit the stronger the flavor becomes. We will definitely make this again and again.

Pan Seared Lemon Tilapia with Parmesan Pasta

Reviewed: Jun. 12, 2014
The fish was fantastic, lots of flavor and the citrus hint is really refreshing. The pasta, on the other hand, needs some TLC and some alterations. All and all a great fish recipe but only an OK pasta recipe.

Grilled Chicken with Rosemary and Bacon

Reviewed: Jun. 9, 2014
We didn't have a grill and you most certainly need one for this recipe -- making it on the stove top is too difficult. However, this is an awesome dish and it is delicious.

Stir-Fry Pork with Ginger

Reviewed: May 28, 2014
This recipe is a great base to a meal. There is a great ginger flavor to it without it being overpowering -- but it is most certainly there. We added sticky white rice and some sauteed mushrooms. We made ours without dark soy sauce, we just added in extra soy sauce, and without Chinese rice wine, we used an American white wine instead. This is simply because we didn't have them readily available to us. All and all, this is good but not yet perfect. We're going to play around with adding in carrots, snap peas, celery, water chestnuts, and other vegetables in various combinations to make this what we really want it to be.

Bacon Mushroom Chicken

Reviewed: May 28, 2014
This dish is AWESOME! My husband and I absolutely loved it. We put it over some leftover rice from the other night and what didn't end up being dinner ended up being his lunch today. I doubled the amount of bacon for two reasons: I'm a stereotypical-bacon-loving-American and it bothered me that the chicken wasn't covered by the bacon. Anyways, awesome dish and I'm sure I will be making it often in the future. The only thing is that I didn't wait long enough for the sauce to thicken and I also didn't have a whisk, which really hindered that but the soupy sauce was still delicious.

Chicken Scarpariello

Reviewed: May 27, 2014
If you don't have someone helping you in the kitchen make sure you have everything prepped before starting. Luckily, my husband was on standby to help me cut stuff up because I went in a little unprepared. That being said, this is a great recipe. If you boil down your sauce too much, don't panic. Let it go until it becomes a little like a paste and then add a half cup of water and allow it to come to the right consistency. I didn't really need to use flour to thicken the sauce and I didn't get something soupy like others have, so hopefully that will help. All and all we really enjoyed this one. There are numerous vegetables, like broccoli and spinach, that could be added to make this a true meal on its own.

Baked Salmon II

Reviewed: May 27, 2014
This dish was so easy to make and it tasted incredible. The only note I would make is to make sure you use the thick pieces of salmon from up towards the head versus the thinner ones from closer to the tail. The thin pieces tend to taste a little watered down in comparison to the thicker ones. This recipe is spot on if you use the thick piece.

Elegant Penne with Asparagus and Shrimp

Reviewed: May 27, 2014
My husband and I loved this meal. The only two things I would change: I will make more pasta than the one cup it calls for, but we eat a lot of food; if you're making this for guests I would cut the red pepper flakes in half simply because there are a lot of people who cannot handle anything hot. I'm typically one of those people but this one was just fine for me. In short, more pasta, fewer red pepper flakes, and we loved it so I will most certainly be making this again.
